Cooking Instructions
Step 1
In a large bowl, combine 300g of bread flour, 6g of salt, 6g of sugar, and 2g of yeast. Mix them well with a whisk or by hand until all dry ingredients are evenly distributed.
Step 2
Add 200ml of lukewarm water and 10g of olive oil. Stir with a spatula or your hands until no dry flour remains, forming a cohesive dough. Transfer the dough to a clean work surface and knead for about 10 minutes until it becomes smooth and elastic. You can achieve this by pushing and folding the dough.
Step 3
Place the kneaded dough into an airtight container or a bowl covered tightly with plastic wrap. Refrigerate for at least 8-12 hours, or preferably overnight, for slow fermentation. This process deepens the flavor and makes the pizza more digestible. If you’re short on time, a 9-hour fermentation will also work.
Step 4
After fermentation, take the dough out; it should be visibly puffed up. Lightly dust your work surface with flour to prevent sticking. Gently handle the dough to release the chill from the refrigerator and bring it to room temperature. Fold the dough towards the center and shape it into a smooth ball, similar to the process of rounding dough.
Step 5
Cover the rounded dough with a damp cloth or plastic wrap and let it rest at room temperature for 1 hour. This final proofing allows the dough to relax and become pliable.
Step 6
Heat a small pan over medium-low heat with a little olive oil. Add the minced garlic and sauté until fragrant, being careful not to burn it. Then, add the finely minced onion and cook until softened and translucent.
Step 7
Once the onion and garlic are softened, stir in the store-bought tomato sauce. Approximately 12 tablespoons is a good amount. Cook for another 2-3 minutes until the sauce slightly thickens and blends well with the aromatics.
Step 8
Transfer the proofed dough onto a well-floured work surface. Generously dust the surface with flour to prevent the dough from sticking.
Step 9
Gently press down on the center of the dough with your fingertips and gradually spread it outwards, creating a circular pizza base. It’s good to leave the edges slightly thicker for the crust. As you spread the dough, try not to deflate any bubbles that form on the edges; these are signs of good fermentation and will contribute to a lovely crust.
Step 10
Place the spread dough onto a cold (unheated) frying pan. Spread the prepared tomato sauce evenly over the dough. Cover the pan with a lid and cook over medium heat for about 2 minutes. This step partially cooks the bottom of the crust, making it delightfully chewy.
Step 11
Carefully lift the edge of the dough to check. Once the bottom is lightly golden and slightly puffed, remove it from the pan. Avoid overcooking at this stage.
Step 12
Now, let’s create the flower design! Thinly slice the fresh mozzarella cheese and arrange the slices on the pizza base to resemble flower petals. Use about five slices, leaving a small gap in the center. Place the egg yolk in the center to mimic the flower’s pistil and add a lovely color after baking. Finally, artistically arrange fresh basil leaves around the center and petals.
Step 13
Bake in a preheated oven at 230°C (450°F) for 5-7 minutes, placing the pizza on the highest rack. Since home ovens can vary in heat, the top rack helps ensure the toppings brown nicely. Your beautiful flower pizza will be ready when the cheese is melted and bubbly, and the crust is golden brown!
