- 80g bacon
- 4 fresh eggs
- 40g lettuce
- 20g baby greens

Cooking Instructions
Step 1
Prepare the greens: Gently tear the lettuce into bite-sized pieces. Soak the lettuce and baby greens in cold water for about 5 minutes to make them crisp. Drain them thoroughly in a colander.
Step 2
Slice the cherry tomatoes: Wash the cherry tomatoes and cut them in half. This makes them easier to eat and arrange on the platter.
Step 3
Cut the bread: Slice the toast bread diagonally in half to create attractive triangles.
Step 4
Make two types of egg mixtures: Crack 2 eggs into each of two separate bowls. In the first bowl, whisk in 50ml of heavy cream and a pinch of salt to create a simple egg wash. In the second bowl, whisk in the remaining 100ml of heavy cream and the cinnamon powder mix for a spiced egg wash.
Step 5
Soak the bread for French toast: Dip the diagonally cut bread slices into the simple egg wash (from the first bowl), ensuring both sides are well-coated and the bread is nicely saturated but not soggy.
Step 6
Cook the French toast: Melt 20g of butter in a pan over low heat. Place the egg-soaked bread slices in the pan and cook over low heat, flipping once, until golden brown and cooked through on both sides. Aim for a beautiful golden hue and a tender texture.
Step 7
Prepare scrambled eggs: In another pan, melt 10g of butter over low heat. Add the remaining 2 eggs. Gently stir and fold the eggs from the bottom of the pan as they cook, creating soft, fluffy curds. Be careful not to overcook them; they should be moist.
Step 8
Grill the sausages: Score the sausages lightly on both sides with a knife. This helps them cook evenly and prevents bursting. Grill them in a pan over medium heat for about 2 minutes, turning occasionally, until nicely browned.

Crisp the bacon: Cook the bacon strips over low heat. This allows the fat to render slowly, resulting in crispier bacon. Flip them as needed to ensure even crisping.
Step 10
Assemble the brunch platter: Arrange the cooked French toast, fluffy scrambled eggs, grilled sausages, and crispy bacon on a large serving plate. Add the prepared lettuce, baby greens, black olives, and halved cherry tomatoes. Drizzle the balsamic dressing over the greens and sprinkle with sliced almonds.
