The ultimate mild and satisfying fried rice! This recipe is perfect for a quick and healthy meal.
Ingredients
- 3 Tbsp cooking oil
- 3 large eggs
- 100g peeled and deveined shrimp
- Generous amount of green onion, finely chopped
- 1 Tbsp minced garlic
- 1 medium onion, finely diced
- Small amount of carrot, finely diced
- Pinch of black pepper
- 0.5 Tbsp rock salt (or to taste)
- 1 Tbsp sesame oil
- 200g cooked rice (about 2 bowls)
Cooking Instructions
Step 1
First, let’s make scrambled eggs. Heat 2 Tbsp of cooking oil in a pan over medium heat. Pour in the 3 beaten eggs and scramble them until just cooked through, creating soft curds.
Step 2
Set the scrambled eggs aside on a plate for now. They will be added back later.
Step 3
Add the remaining 1 Tbsp of cooking oil to the same pan. Sauté the minced garlic and the generously chopped green onions until fragrant. Then, add the finely diced onion and carrot. Season lightly with rock salt and stir-fry until the vegetables begin to soften and turn translucent.
Step 4
Once the onions and vegetables are slightly cooked and tender, it’s time to add the next ingredient.
Step 5
Add the 100g of shrimp. Season the shrimp lightly with rock salt and stir-fry until they turn pink and are cooked through. Ensure all shrimp are coated with the seasonings.
Step 6
To ensure the shrimp cook evenly and remain tender, reduce the heat to medium-low and cover the pan with a lid. Let them steam for about 2-3 minutes. Cooking on lower heat also helps loosen any bits stuck to the bottom of the pan, making for a cleaner fried rice.
Step 7
Once the shrimp are cooked, add the 200g of warm cooked rice (about 2 bowls). Use a spatula to break up any clumps of rice and mix it thoroughly with the shrimp and vegetables.
Step 8
Stir-fry everything together evenly. Make sure the rice, vegetables, and shrimp are well combined and that the rice grains are separated. Keep stirring to prevent sticking.
Step 9
When the rice and ingredients are well-fried and have a slightly crisp texture, turn off the heat. Drizzle in 1 Tbsp of sesame oil and give it a final gentle toss to distribute the aroma.
Step 10
Finally, add the prepared scrambled eggs back into the pan. You can gently fold them in with the rice, or serve them on top to be mixed in by each diner, depending on preference. Both ways are delicious!
Step 11
Taste the fried rice and adjust the seasoning with more rock salt if needed. (I used a total of about 0.5 Tbsp of rock salt). Stir gently one more time to ensure all flavors are well blended.
Step 12
After enjoying some spicy Kimchi, I craved something comforting and mild, so I made this fried rice. It’s very filling and the delicate flavor is wonderfully satisfying. If you don’t have shrimp, this recipe makes a delicious egg fried rice on its own!
