Enjoy the nutty flavor of bean sprouts even more by adding perilla seed powder! This dish offers a delightful texture and rich aroma, making it a fantastic side dish for meals and a healthy addition to lunch boxes.
Main Ingredients- 1 bag bean sprouts (approx. 300g)
- 1/4 carrot (approx. 30g), thinly julienned
Seasoning Ingredients- 1 Tbsp perilla oil
- 1 Tbsp soup soy sauce (or regular soy sauce)
- 1/2 tsp minced garlic
- 2 Tbsp perilla seed powder
- 5 Tbsp water from boiling bean sprouts
- A pinch of sesame seeds (white or black)

Cooking Instructions
Step 1
First, wash the bean sprouts thoroughly. Bring a pot of water to a boil, add the bean sprouts, and blanch for 2-3 minutes until they are crisp-tender. Be careful not to overcook them, as they can become mushy. Drain the blanched bean sprouts and thinly julienne the carrot.
Step 2
Heat a pan over medium-low heat. Add 1 Tbsp of perilla oil, 1 Tbsp of soup soy sauce, and 1/2 tsp of minced garlic. It’s important to sauté the garlic gently over low heat to release its aroma, as high heat can burn it.
Step 3
Swirl the pan or gently stir with a spatula to combine the perilla oil, soy sauce, and minced garlic. Stir-fry briefly, ensuring the seasonings do not burn.
Step 4
Add the blanched bean sprouts and julienned carrots to the pan. Stir-fry over medium heat for about 2-3 minutes, allowing the seasonings to coat the vegetables evenly. Cook just until the carrots are slightly tender for a pleasant texture.
Step 5
Once the bean sprouts and carrots have absorbed some of the seasoning, add 2 Tbsp of perilla seed powder. Stir well to prevent the powder from clumping.
Step 6
Pour in 5 Tbsp of the water used to boil the bean sprouts. This liquid will add moisture and a savory depth to the stir-fry. Add it so it blends well like a sauce.
Step 7
Continue to stir-fry over medium heat for another 1-2 minutes, allowing the perilla seed powder and bean sprout water to meld together, creating a glossy finish. Once the nutty aroma of the perilla seeds becomes noticeable, turn off the heat. Sprinkle with sesame seeds for a final touch. Serve hot, perhaps over a bowl of rice!
