The rolled omelet is one of the most familiar dishes, and it’s always delicious no matter when you eat it! Today, we’ve made a cheese-filled rolled omelet for an extra special treat. The fantastic combination of soft eggs and gooey, stretchy cheese makes it a perfect snack for children and an excellent appetizer for adults. Create a wonderful dish with simple ingredients!
Ingredients- 5 fresh eggs
- 3 slices of cheddar cheese
- 2 Tbsp bell pepper (finely chopped)
- 5 pinches of salt
- 2 Tbsp green onion (finely chopped, white parts preferred)

Step 1
First, prepare the vegetables that will add flavor and texture to your rolled omelet. Finely chop the vibrant red bell pepper and the crisp green onion (using mostly the white parts will make it softer). You can also add other leftover vegetables you have at home, such as finely minced carrots or onions. Chopping the vegetables finely ensures they mix well with the eggs and don’t clump together in the omelet.
Step 2
Crack 5 fresh eggs into a clean bowl. Add 5 pinches of fine salt to eliminate any eggy smell and season the eggs. Use chopsticks or a whisk to vigorously beat the eggs until the yolks and whites are completely combined. It’s important to beat them gently, as if removing the chalazae (the white, stringy bits).
Step 3
Add the pre-chopped bell pepper and green onion to the egg mixture and stir well. Including vegetables this way makes the rolled omelet look more appealing and adds an interesting texture when bitten into. Gently mix so the egg mixture doesn’t become lumpy.
Step 4
Stack the 3 slices of cheddar cheese neatly. Then, carefully cut the stacked cheese in half. Cutting the cheese in half like this makes it easier to layer inside the rolled omelet as you cook it, and it helps control how much cheese melts and oozes out.
Step 5
Now, prepare the pan for cooking the rolled omelet. Lightly grease the pan with a little cooking oil, then use a paper towel to spread a thin, even coating of oil across the entire surface. If you use too much oil, the egg mixture will run and make it difficult to control the thickness. Once the pan is moderately heated, pour in just enough of the prepared egg mixture to thinly coat the bottom of the pan. The key is not to pour too much at once.
Step 6
Cook the egg mixture over medium-low heat. When the edges of the omelet start to set and the top is about 80% cooked and still moist, place the cut pieces of cheddar cheese side-by-side on the surface. It’s crucial to add the cheese while the egg is still moist; if it’s overcooked, the cheese won’t melt properly and might separate from the egg.
Step 7
Gently and carefully begin to roll the omelet from the edge where the cheese is placed, covering the cheese as you roll. Keep the heat low to prevent the egg from burning; roll slowly. Use chopsticks or a spatula to roll it up.
Step 8
Don’t roll the omelet all the way to the end; stop when about one-third of the egg is left unrolled. This is done so that the next addition of egg mixture can connect seamlessly. Gently move the rolled portion to the far side of the pan to create space.
Step 9
Pour the remaining egg mixture into the empty space you’ve created. You will repeat this process of adding egg and rolling several times. Make sure the poured egg mixture connects well with the edge of the previously rolled omelet.
Step 10
Continue this process, adding a little egg mixture and rolling, repeating as necessary. It’s best to roll before the egg mixture is completely set to minimize gaps between the layers and achieve a beautiful shape! Finally, to perfect the shape, gently roll the omelet on all sides—front, back, and edges—in the pan until evenly cooked. This multi-layer rolling creates a rich flavor with plenty of cheese inside.
Step 11
Once the rolled omelet is cooked, let it cool slightly on a cutting board. Then, slice it into your desired bite-sized pieces. Slicing it while too hot can cause it to fall apart, so let it cool a bit for a neat cut. Slicing it to about 1.5-2 cm thickness makes it easy to pick up with chopsticks and visually appealing.
