Main Ingredients
  • Noodles for 4 servings (thin or medium noodles)
  • 1 bell pepper (or chives, zucchini as alternatives)
  • 2 king oyster mushrooms

Golden Ratio Sauce
  • 2 Tbsp soy sauce
  • 1/2 Tbsp soup soy sauce
  • 1 Tbsp plum extract (sweetness adjustable)
  • 1 Tbsp perilla oil or sesame oil
  • 1/2 Tbsp minced garlic
  • 1 Tbsp sugar (sweetness adjustable)
  • 1 Tbsp toasted sesame seeds

Cooking Instructions

Step 1

Bring a generous pot of water to a boil. Add the noodles and, once the water re-boils, add about half a cup of cold water. Repeat this process 2-3 times. This method ensures the noodles are cooked to a perfect chewy and springy texture.

Step 2

Once the noodles are cooked, immediately transfer them to a bowl of cold water for a refreshing rinse. Rapidly cooling the noodles helps maintain their chewy texture.

Step 3

Place the noodles in running cold water and rub them gently with your hands while rinsing. This step removes excess starch from the noodle surface, resulting in a cleaner and more springy noodle.

Step 4

Drain the rinsed noodles and place them in a colander, portioning them into servings if desired. Ensure all excess water is completely drained. Leftover water can dilute the sauce.

Step 5

In a bowl, combine 2 Tbsp soy sauce, 1/2 Tbsp soup soy sauce, 1 Tbsp plum extract, 1/2 Tbsp minced garlic, 1 Tbsp sugar, 1 Tbsp perilla oil (or sesame oil), and 1 Tbsp toasted sesame seeds. Mix well until the sugar is dissolved to create a delicious sauce.

Step 6

Seed the bell pepper and slice it into thin strips. Slice the king oyster mushrooms into similar-sized strips. Feel free to use other vegetables from your fridge, such as onions, carrots, or zucchini.

Step 7

Lightly grease a heated pan with a little oil. Add the prepared vegetables and stir-fry quickly until they are just tender. Be careful not to overcook, as this can make them mushy.

Step 8

Place the drained noodles in a mixing bowl. Add about 2/3 of the prepared sauce and gently toss to coat the noodles evenly. It’s important that the sauce is well-distributed.

Step 9

Add the stir-fried vegetables to the noodles. Add the remaining sauce and mix again gently. Taste the sauce at this point and adjust the seasoning to your preference. If it’s too salty, add a little water.
