Cooking Instructions

Step 1

First, let’s make the refreshing Oriental dressing to go with the poke salad. In a bowl, combine 1 Tbsp oligosaccharide, 1 Tbsp lemon juice, 1 Tbsp olive oil, 1 Tbsp vinegar, 1 Tbsp soy sauce, and 1 Tbsp sesame oil. Add a tiny bit of wasabi and 0.5 Tbsp minced garlic for a hint of spice.

Step 1

Step 2

Using a spatula or whisk, stir everything together until well combined. This will create a tangy, sweet, and slightly pungent poke dressing that’s ready to use.

Step 2

Step 3

Now, let’s prepare the vegetables that will add color and texture to your poke bowl. Wash the lettuce and tear or chop it into bite-sized pieces. Thinly slice the cucumber, or cut it into half-moon shapes. Halve the cherry tomatoes. Thinly slice the onion and red cabbage. Shred the crab stick lengthwise. Feel free to add other ingredients like corn, avocado, or tobiko for a more elaborate bowl!

Step 3

Step 4

Let’s prepare the main ingredient, the duck breast. Bring a pot of water to a boil and briefly blanch the 50g of duck breast until it’s just cooked through. Be careful not to overcook it, as it can become tough. You can also use boiled chicken breast as a substitute for duck breast.

Step 4

Step 5

All the ingredients are ready! Now, let’s assemble your poke bowl. Start by lining the bottom of a bowl with lettuce. Add a portion of brown rice on top. Arrange the prepared cucumber, cherry tomatoes, onion, red cabbage, shredded crab stick, and garlic chips decoratively over the rice. Finally, place the blanched duck breast on top to complete your delicious and nutritious duck breast poke bowl! Drizzle generously with the dressing and enjoy.
