Main Ingredients- 200g canned tuna flakes, drained of excess oil
- 2 large eggs
- A small amount of scallion, finely chopped
- A small amount of enoki mushrooms, trimmed and separated
- 1 sheet of dried laver (gim)
Cooking Instructions
Step 1
Open the canned tuna and gently drain out most of the oil. Leave the can open for about 5 minutes to allow any remaining oil to drain further. (This helps reduce furans, which may be present in small amounts in canned tuna oil).
Step 2
In a bowl, combine the drained tuna with the finely chopped scallions and separated enoki mushrooms. If you have other vegetables, feel free to add them after chopping them very thinly. (e.g., onion, carrot). Thinly slicing is important for even cooking.

Crack in 2 eggs and mix everything thoroughly until well combined. The mixture might seem a bit stiff at first, but it will bind together as you mix. If the batter is too dense and doesn’t hold its shape well, add 1 more egg to achieve the right consistency.

(Skip this step if you added an extra egg in the previous step.) If the batter feels too dry and isn’t forming well, add one additional egg and mix again until the consistency is right. Be careful not to make the batter too watery, as it will be difficult to form the pancakes. Add eggs gradually.

Tear the dried laver (gim) into small pieces and add it to the mixture. The seaweed will add a wonderful savory depth to the pancakes. After adding the seaweed, mix gently – just enough to incorporate it without overmixing. Think of it as a quick ‘swish’ to blend.

Heat a frying pan over medium-low heat and add a generous amount of cooking oil. Shape the tuna mixture into small, flattened patties and place them in the hot pan. Ensure there’s enough oil to prevent sticking.
