Making the Earl Grey Peach Syrup- 1 Fresh Peach (skin on is fine)
- 1 can (syrup included) Canned Peaches
- 10 Earl Grey Tea Bags
- 1L Water
- 1kg Granulated Sugar
- 1 Fresh Peach (skin on is fine)
- 1 can (syrup included) Canned Peaches
- 10 Earl Grey Tea Bags
- 1L Water
- 1kg Granulated Sugar
Cooking Instructions
Step 1
First, let’s prepare the fragrant Earl Grey Peach Syrup. In a pot, combine 1L of water and 1kg of granulated sugar. Heat over medium heat, stirring until the sugar is completely dissolved. Once the sugar has dissolved, remove from heat and add 10 Earl Grey tea bags. Let them steep for 10 minutes, then remove the tea bags. Add 1 fresh peach, cored and roughly chopped, and 1 can of canned peaches (including the syrup) to the pot. Simmer over low heat for 15-20 minutes, or until the fresh peach pieces are tender. Drain the cooked fresh peach, let it cool slightly, then mash it to a jam-like consistency or chop it finely. This syrup can be stored in the refrigerator after cooling completely.
Step 2
Next, we’ll make the whipped cream to top your latte. In a chilled bowl, combine 100ml of heavy cream and 10g of sugar. Using a hand mixer or a whisk, whip the cream until it reaches a soft peak stage – it should be slightly thickened but not stiff. Be careful not to over-whip, as this can make the topping too dense for the latte.
Step 3
Now, let’s assemble the latte. Choose a clear glass or a pretty mug. Start by pouring 10g of Earl Grey syrup into the bottom of the cup.
Step 4
Add 40g of the prepared Earl Grey Peach Syrup on top of the Earl Grey syrup. Gently stir with the back of a spoon to combine the syrups, adjusting the amount to your preference.
Step 5
If using ice, add a suitable amount to the cup. Then, slowly pour in 150ml of fresh, cold milk over the syrups. Pouring the milk gently will help create a beautiful layered effect.
Step 6
Finally, carefully pour 1 shot of espresso (approximately 30ml) over the milk. To achieve a nice layered look, tilt the cup slightly and pour the espresso down the side of the glass rather than directly in the center. This technique helps the espresso float on top, creating distinct layers.
