How to Make Delicious Earthenware Pot Mushroom Rice with Matsutake Mushrooms
This nutritious rice cooked in an earthenware pot, featuring the wonderful aroma of pine mushrooms (Matsutake), is a complete and satisfying meal on its own. The chewy mushrooms, nutty ginkgo nuts, and sweet jujubes create a rich flavor profile, and the rice cooked in the earthenware pot boasts a beautiful sheen. Make this dish for special occasions or when you desire a healthy and flavorful meal.
Rice Ingredients- 1 cup White Rice
- 1/2 cup Sweet Rice (Glutinous Rice)
- 1/2 cup Brown Rice
- A handful of Pine Mushrooms (Matsutake, approx. 50-70g)
- 1/7th of a Carrot (small)
- 1/2 handful Ginkgo Nuts (approx. 10-15 nuts)
- 2 Jujubes
- 2 cups Water (or adjust according to rice quantity)
Cooking Instructions
Step 1
First, rinse the rice (white, sweet, and brown rice) for cooking and let it soak for about 30 minutes. Clean the pine mushrooms by brushing off any dirt, then slice them into thin strips (about 0.5cm thick). Finely dice the carrot. Remove the pits from the jujubes and slice them thinly. Prepare the ginkgo nuts by removing their shells.
Step 2
Drain the soaked rice and place it into the earthenware pot. Spread the finely diced carrots evenly over the rice.
Step 3
Generously arrange the sliced pine mushrooms over the rice and carrots. Finally, artfully place the prepared ginkgo nuts and sliced jujubes on top.
Step 4
Carefully pour 2 cups of water into the earthenware pot. (Adjust the water amount based on the type and condition of your rice. Generally, about 1.1 to 1.2 times the volume of rice is appropriate.) Place the pot on the stove over high heat and wait for the water to come to a boil. As soon as it starts to bubble vigorously, immediately reduce the heat to medium. At this stage, lift the lid slightly to prevent the water from boiling over, adjusting the heat as needed.
Step 5
Once the water has reduced and the rice grains become visible over medium heat, cover the pot again and reduce the heat to the lowest setting (simmer). Let it cook on low heat for about 3-4 minutes until the rice is fluffy and well-cooked. Turn off the heat and let it steam for about 10 minutes, covered, to allow the rice to become perfectly tender and glossy.
Step 6
Serve the delicious earthenware pot mushroom rice with the prepared soy sauce seasoning, or simply with soy sauce and sesame oil to taste. Enjoy this healthy and satisfying meal, savoring the fragrant mushroom aroma and chewy texture!
