Easy and Delicious Beef and Radish Soup (Sogogi Muguk) for Kids

This is the soup my 3-year-old loves the most! It’s easy to make with simple ingredients, making it a frequent menu item in our household. The clear, refreshing broth combined with tender beef and crisp radish creates a nutritious soup that’s perfect for kids and the whole family. It’s also wonderful for enjoying with a bowl of rice!

Ingredients

  • Beef (for soup) 150g
  • Korean Radish (Moo) 1/3 (approx. 200g)
  • Scallions, a small amount
  • Tofu 1/3 block
  • Sesame oil 1 Tbsp
  • Soy sauce for soup (Guk-ganjang) 1-2 Tbsp (start with 1 Tbsp for baby)
  • Salt 1/2 tsp (adjust to taste)
  • Minced garlic 1 tsp

Cooking Instructions

Step 1

Prepare all the ingredients for your delicious beef and radish soup! Wash and peel the radish, and get the scallions and tofu ready.

Gently pat the beef dry with paper towels to remove any excess blood. Removing the blood will result in a cleaner, less gamey, and more flavorful broth.

Dice the radish into bite-sized pieces, about 1cm thick, suitable for your child. If you’re serving adults, you can cut them slightly larger. Slice the scallions diagonally, and cut the tofu into 1.5cm cubes.

Heat 1 Tbsp of sesame oil in a pot over medium-high heat. Add the beef and stir-fry until it’s browned on all sides. Searing the beef well will enhance its savory flavor.

Once the beef starts to brown, add the diced radish to the pot and stir-fry together for 2-3 minutes, allowing the radish to get coated in sesame oil. Then, add 1 tsp of minced garlic and stir-fry for another minute until fragrant. This step helps to bring out the radish’s natural sweetness.

When the radish begins to look slightly translucent from stir-frying, pour in 5-6 cups (approx. 1L-1.2L) of cold water or anchovy broth. Bring the soup to a rolling boil over high heat, then reduce the heat to medium.

Once boiling, add the tofu and scallions. Let it come back to a boil, then reduce the heat to medium-low and simmer for about 10 minutes, or until the radish is tender and translucent. Season the soup with 1-2 Tbsp of soy sauce for soup and salt to your taste. For baby food, it’s best to keep the seasoning light. Adjust as needed. Your clear and refreshing beef and radish soup is ready! My child absolutely loves it.
