Main Ingredients

  • 1 block Tofu
  • 1 Cheongyang pepper (Korean chili pepper)
  • 1/2 stalk Green onion

Seasoning Sauce

  • 2 ladles Water (approx. 200ml)
  • 1 Tbsp Gochugaru (Korean chili powder)
  • 1/2 Tbsp Minced garlic

Baek Jong-won’s All-Purpose Sauce Ingredients

  • 1.5 cups Minced pork (approx. 300g)
  • 1/2 cup Sugar (approx. 100g)
  • 3 cups Soy sauce (approx. 600ml)

Cooking Instructions

Step 1

First, let’s make Baek Jong-won’s all-purpose sauce, the key to delicious braised tofu. Generously add 1.5 cups (approx. 300g) of minced pork to a bowl.

Next, add 1/2 cup (approx. 100g) of sugar and 3 cups (approx. 600ml) of soy sauce for a deep flavor. Ensure you follow the ratio accurately.

Now, transfer the prepared ingredients to a pot and bring it to a boil over high heat. Once it starts boiling, reduce the heat.

Skim off any foam that rises to the surface as the sauce boils. Simmer for another 5-7 minutes to allow the alcohol to evaporate and the flavors to meld beautifully.

Voila! Your delicious Baek Jong-won style all-purpose sauce is ready. Let it cool slightly before storing to use in various dishes.

Rinse the tofu under running water, then cut it into three equal portions, about 1.5-2cm thick, into bite-sized pieces. Finely chop the green onion and the Cheongyang pepper (remove seeds if you prefer less spice).

Arrange the sliced tofu neatly at the bottom of a pot. Sprinkle 1/2 Tbsp of minced garlic, 1 Tbsp of gochugaru, and the chopped green onion and Cheongyang pepper evenly over the tofu. Finally, pour in 1 ladle of the all-purpose sauce and 2 ladles of water.
