Main Ingredients

  • Pork tenderloin 400g
  • Cornstarch 60g
  • Water 280g
  • Frozen minced scallion 25g
  • Frozen minced ginger 15g

Seasoning

  • Cooking oil 30g
  • Sweet bean paste (Tianmianjiang) 80g (or Hoisin sauce)
  • Doenjang (Soybean paste) 30g
  • Sugar 35g
  • Shaoxing wine 30g
  • Sesame oil 30g
  • Black pepper

Cooking Instructions

Step 1

Thinly slice the pork tenderloin into fine strips. In a bowl, combine the frozen minced scallion and ginger with 200g of water. Gently rub them with your hands to help release their aromas into the water. Take about half of this infused water (approximately 100g) and add it to the pork strips. Mix well, allowing the pork to absorb the liquid. Next, add a pinch of black pepper and salt (about 1g each), the white of one egg, and a little dark soy sauce for color. Mix thoroughly to coat the pork.

In a separate small bowl, mix the remaining 80g of water with the cornstarch until smooth and well-combined. Let the mixture settle, then carefully pour off the clear top water, leaving behind the thick, starchy sediment at the bottom. Add this wet starch to the marinated pork and mix evenly to coat. Finally, drizzle in 30g of cooking oil and mix again. This step helps prevent the pork from clumping together when stir-fried.

In a small bowl, combine the sweet bean paste (or hoisin sauce), doenjang, sugar, and Shaoxing wine. Stir well until the sugar is dissolved and you have a smooth sauce mixture.

Heat a wok or large skillet over medium-high heat and add a generous amount of cooking oil. Once the oil is warm (not smoking), carefully add the coated pork strips. Use chopsticks or a spatula to quickly stir-fry, separating the strips as they cook. Cook for about 3 minutes until the pork is lightly browned and starting to crisp. Pour in the prepared sauce mixture and stir-fry for another minute. Then, add the reserved scallion-ginger infused water. Continue to stir-fry until the sauce thickens and clings beautifully to the pork. Turn off the heat and finish with a generous drizzle of sesame oil for added aroma.
