- 1 can canned saury (drained)
- 1/2 onion (thinly sliced)
- 1 handful of Korean green chili peppers (washed, stems removed)

- 1 dried red chili pepper (cut and seeds removed)

- 2 Tbsp sake
- 1/3 cup mirin (or cooking wine)

Let’s start by preparing the vegetables. Peel and thinly slice the onion. Wash the Korean green chili peppers thoroughly and remove their stems.

Thinly slice the garlic clove for aromatic flavor. If you like a bit of spice, use the dried red chili pepper; cut it in half and remove the seeds to reduce bitterness. (Feel free to leave the seeds in if you prefer more heat.)

Drain the canned saury by placing it in a sieve. Discard the liquid. This step helps to remove any fishy odor and allows the simmering sauce to penetrate the fish better.
