Delicious Kimchi Pancake Made with Leftover Carrots

Don’t worry if you have leftover carrots from cooking or some aged kimchi in your fridge! You can easily and quickly make a delicious Kimchi pancake. This recipe offers a delightful meal or snack option, even without special ingredients.

  • 1/2 carrot
  • 1 section of well-fermented kimchi (approx. 150g)
  • 1 egg

Cooking Instructions

Step 1

First, wash and peel the carrot, then julienne it finely. Using a mandoline slicer can be convenient, but be very careful to avoid cutting your fingers. Chop the well-fermented kimchi into small pieces. Prepare all your ingredients.

Step 2

In a large bowl, combine the julienned carrots, chopped kimchi, and 1 egg. Add 100g of pancake mix (or flour) and 1/2 cup of cold water. It’s best to start with a little water and gradually add more as needed to reach your desired batter consistency. If the batter is too thick, add more water; if it’s too thin, add more flour until you achieve a smooth, slightly thick batter.

Step 3

Heat a frying pan over medium heat and add a generous amount of cooking oil. Use a spoon to ladle small portions of the batter onto the hot pan, spreading them slightly. Making the pancakes relatively thin will help them cook evenly and achieve a crispier texture. Fry for about 2-3 minutes until the edges turn golden brown.

Step 4

Once the edges of the pancake start to look cooked, carefully flip it over using a spatula. After flipping, gently press down on the surface of the pancake with tongs. This helps ensure the heat penetrates evenly, cooking the pancake thoroughly and resulting in a more delicious texture. Cook the other side until it’s also golden brown.

Step 5

Cut the well-cooked carrot kimchi pancake into desired pieces and arrange them attractively on a plate. If you find it needs more flavor, you can mix 1 Tbsp of soy sauce with 1/2 tsp of sesame oil and a pinch of sesame seeds to create a dipping sauce.
