Despite not having much going on lately, I find myself short on time to make snacks for the kids – though that’s just an excuse! Having received a delivery of nutritious food for my child, I decided it was the perfect time to whip up some egg sandwiches. This recipe is quick, easy, and packed with goodness, making it an ideal snack solution. Let’s explore how to make these delightful egg sandwiches, along with rice balls and mini omelets!
Sandwich Ingredients- 4 slices of bread
- 3 hard-boiled eggs
- 3-4 Tbsp mayonnaise
- Strawberry jam (for spreading)
- Cream cheese (for spreading)

First, let’s prepare the hard-boiled eggs for the sandwich. Place the eggs in a pot, cover with water, and boil until fully cooked (about 10-12 minutes). While the eggs are boiling, finely chop your chosen vegetables (like onion, carrot, bell pepper) for the sandwich filling. If you have bacon, chopping it finely and sautéing it will add extra flavor. Once the eggs are boiled, rinse them under cold water, peel them, and while still warm, mash them thoroughly using a potato masher or a fork. In a bowl, combine the mashed eggs with the chopped vegetables (and sautéed bacon, if using), mayonnaise, a pinch of salt, and pepper. Mix well to create the sandwich filling. Adjust the amount of mayonnaise to your preference.
