  • 1 Tbsp minced garlic
  • 1 Tbsp cooking wine (mirin)
  • 1 Tbsp oligosaccharide
  • 2 Tbsp plum extract
  • 0.5 Tbsp sugar
  • 1 Tbsp sesame oil
  • 1 Tbsp gochugaru (Korean chili flakes)
  • A little chopped chives
  • Sesame seeds to taste

Cooking Instructions

Step 1

To make the bean sprout rice, wash the rice and let it soak for a while. For Hodul’s family, we use mixed grains. For 3 cups of rice (using a rice cooker measuring cup), we adjusted the water to about 2.7 cups.

Step 1

Step 2

For the beef topping, I placed the ground beef on paper towels to drain any excess blood and defrost it.

Step 2

Step 3

Rinse the bean sprouts thoroughly under running water and drain them well. I used about one large bag of bean sprouts sold at the supermarket.

Step 3

Step 4

Spread the bean sprouts generously over the soaked rice and start the cooking cycle! At Hodul’s house, we usually cook mixed grains on a high-heat setting, so we selected that option and started cooking.

Step 4

Step 5

While the rice is cooking, prepare the beef topping. Mix the beef topping ingredients: 2 Tbsp soy sauce, 1 Tbsp cooking wine, 1 Tbsp plum extract, 0.5 Tbsp minced garlic, and 1 Tbsp oligosaccharide, and mix well.

Step 5

Step 6

Next, let’s make the bean sprout rice seasoning sauce. We tend to make a generous amount of sauce at Hodul’s. For the seasoning sauce: 7 Tbsp soy sauce, 1 Tbsp minced garlic, 1 Tbsp cooking wine, 1 Tbsp oligosaccharide, 2 Tbsp plum extract, 0.5 Tbsp sugar, 1 Tbsp sesame oil, and a good sprinkle of sesame seeds. Mix well, then set aside a portion for the children.

Step 6

Step 7

For the adult portion of the sauce, add 1 Tbsp of gochugaru (Korean chili flakes) and some finely chopped chives or green onions. Mix to create the final sauce.

Step 7

Step 8

Now, stir-fry the beef topping. Lightly oil a pan and cook the seasoned beef until all the moisture has evaporated. Be sure to stir occasionally to prevent burning.

Step 8

Step 9

Meanwhile, the bean sprout rice is all done!

Step 9

Step 10

Carefully remove the cooked bean sprouts from the rice and set them aside. Gently mix the rice with a spatula to even out the heat and moisture.

Step 10

Step 11

Now, let’s plate it beautifully for a delicious bowl of bean sprout rice! Serve the rice, top it with the reserved cooked bean sprouts, and then add the savory beef topping. All that’s left is to add your desired amount of seasoning sauce and mix it all up!

Step 11

Step 12

Serve with your preferred amount of seasoning sauce, according to both adult and child preferences.

Step 12

Step 13

Tip: Since we separately stir-fried the beef for the topping, it’s best to add the seasoning sauce gradually rather than all at once. This way, you can best enjoy the natural flavors of the bean sprouts and rice.

Step 13

Step 14

As the weather is getting warmer, serving this with some chilled seaweed cold soup (miyeok naengguk) makes for a perfect pairing! The heartiness of the bean sprout rice and the refreshing coolness of the soup complement each other beautifully.
