Easy Homemade Stuffed Paratha

Paratha is a popular flatbread enjoyed in India and Bangladesh. When stuffed with vegetables, meat, or cheese and then cooked, it resembles a large, savory pancake or a sweet, pan-fried bun like ‘hotteok’. While making the dough from scratch can be challenging, I find using pre-made Indian bread dough makes this recipe quick and simple. It’s incredibly delicious and perfect for lunchboxes or as a satisfying snack. If you’re in Australia, you can find all the ingredients at Coles or Woolworths. Enjoy this delightful homemade treat!

Main Ingredients

  • 4 potatoes
  • 2 Tbsp chopped green onions
  • 1/2 Tbsp Cumin Seeds
  • 4 frozen Chapatti pieces

Spices

  • 1/2 tsp Cinnamon powder
  • 1 tsp Garam masala
  • 1 tsp Salt
  • 1 Tbsp Kasuri methi (dried fenugreek leaves)

Cooking Instructions

Step 1

First, peel the 4 potatoes and boil them until they are completely tender. This ensures they will mash easily and create a smooth filling.

Once the potatoes are cooked, transfer them to a large bowl while still warm. Add 2 tablespoons of chopped green onions. For an extra layer of freshness and flavor, you can also finely chop and add fresh coriander at this stage.

Now, add all the prepared spices to the bowl with the potatoes and green onions: cinnamon powder, garam masala, and salt. If you enjoy a bit of heat or extra depth, feel free to add coriander powder and chili powder. I’ve used spices I had on hand today. Kasuri methi isn’t strictly necessary, but it adds a wonderful aromatic quality – those green leaves in the picture are Kasuri methi, and they smell fantastic!

Using a fork or a potato masher, thoroughly mash the potatoes until they are smooth and well combined with the other ingredients. Ensure there are no large lumps for the best texture.

Lay one piece of frozen Chapatti on a flat surface or plate. Spoon a generous amount of the mashed potato filling onto one half of the Chapatti. Fold the other half over the filling to create a half-moon shape, sealing the edges. Alternatively, you can use two Chapatti pieces to make a sandwich-style paratha, placing the filling between them.

Place the assembled parathas into a steamer and steam for approximately 10 minutes. Steaming helps to cook the dough through and meld the flavors beautifully.

Heat a generous amount of olive oil in a frying pan over medium heat. Carefully place the steamed parathas into the hot pan and cook until they are golden brown and crispy on both sides, flipping as needed. As they cook, sprinkle some cumin seeds over the parathas for added aroma and flavor. You can also sprinkle a little chili powder for a spicy kick.
