Cooking Instructions
Step 1
First, let’s prepare the jujube water, which adds a wonderful depth of flavor to the yakbap. In a pot, combine 400ml of water and 15 dried jujubes that have been washed thoroughly. Simmer for about 10 minutes. After simmering, press the jujubes firmly with a spoon or spatula against a sieve to extract all their sweet juice, then set aside the clear jujube liquid. This step is crucial for developing the subtle sweetness and aroma of your yakbap.
Step 2
Now, we’ll make the delicious seasoning sauce for the yakbap. To the jujube water you prepared earlier, add all the seasoning ingredients except for the sesame oil: soy sauce, brown sugar, cinnamon powder, and honey. Stir well until the sugar is completely dissolved. Once the seasonings are evenly combined, your flavorful yakbap water is ready! You can adjust the sweetness by modifying the amount of brown sugar.
Step 3
The essential preparation for making yakbap is complete! Rinse the glutinous rice, which has been soaked for at least 3 hours, and drain it well. Place the soaked glutinous rice into the inner pot of your electric rice cooker. Add the prepared yakbap water, chestnuts (pitted and prepared), pine nuts, sunflower seeds, and mixed nuts. Close the lid and press the ‘Cook’ or ‘White Rice’ setting on your rice cooker. Your delicious yakbap will be ready once the cooking cycle is complete.
Step 4
Your delicious yakbap is ready to be enjoyed! Once the rice cooker finishes, open the lid and drizzle 1 Tbsp of sesame oil over the warm yakbap. Gently mix with a spatula to give it a nice sheen. Then, shape it as desired and cut it into portions. It’s easier to cut if you let it cool slightly; you can also carefully remove the yakbap from the pot and let it cool on a wire rack for a bit before slicing. It remains deliciously chewy even after cooling completely and can be stored in the refrigerator.
