Simple Kimchi Recipe Without Sweet Rice Porridge or Cooked Rice

Kimchi Ingredients- Napa cabbage 500g
- Coarse salt 80g
- Gochugaru (Korean chili flakes) 8 Tbsp
- Fish sauce 10 Tbsp
- Sugar 1 Tbsp
- Corn syrup 1 tsp
- Minced ginger 1 tsp
- Minced garlic 1 Tbsp
Cooking Instructions
Step 1
Cut the washed napa cabbage in half and sprinkle coarse salt generously between the leaves. Let the cabbage wilt for about 2 hours. This process helps soften the cabbage and gives it a crisp texture.

After salting for 2 hours, rinse the cabbage thoroughly under running water several times to remove excess salt. It’s important to rinse well, as too much salt can make the kimchi overly salty.

Shake off any excess water from the rinsed cabbage. If there’s too much moisture, the kimchi can become bland or mushy quickly. You can let it drain on a colander or gently pat it with paper towels to remove water.

Now, let’s make the delicious seasoning that is the heart of this kimchi! In a bowl, combine 8 Tbsp of gochugaru, 10 Tbsp of fish sauce, 1 Tbsp of sugar, 1 tsp of corn syrup, 1 tsp of minced ginger, and 1 Tbsp of minced garlic. Mix everything well until you have a flavorful paste.
