Ingredients

  • 2 eggplants (medium-sized)
  • 1-2 Korean green chilies (adjust to your preference)

Seasoning

  • 1/2 Tbsp anchovy sauce
  • 1/2 Tbsp minced garlic
  • 1/4 Tbsp red pepper flakes (for color)
  • 1/2 Tbsp toasted sesame seeds
  • 1/2 Tbsp sesame oil
  • 1/2 Tbsp soy sauce for soup (for added umami)

Wash the eggplants thoroughly and trim off the ends. Cut each eggplant into 3 equal pieces lengthwise, and then cut each piece into 2-3 strips to create bite-sized pieces. Arrange the cut eggplant in a microwave-safe dish. (Make sure to use a dish or container that is safe for microwave use.)

Cover the dish with plastic wrap. This helps to retain moisture and ensures the eggplant cooks evenly. Microwave for about 4 minutes. (Cooking time may vary depending on the size of the eggplant and your microwave’s wattage.)

Carefully remove the microwaved eggplant from the microwave. The eggplant should be tender and bend easily when poked. Be cautious as it will be hot. Gently squeeze out any excess water from the eggplant using your hands. Avoid squeezing too hard, as this can make the eggplant dry; a moderate squeeze is best. Place the squeezed eggplant in a mixing bowl.
