It’s best to choose fresh eggplants. Look for ones that are plump, shiny, and have a vibrant color. (The eggplants I used today were slightly imperfect from a delivery service, but they taste great!) First, rinse the eggplants thoroughly under running water until they squeak clean.

Cut the rinsed eggplants into bite-sized pieces. If you cut them too small, they might get mushy while steaming, so aim for a size that’s easy to eat in one bite.

Place the cut eggplant into a microwave-safe plastic bag. Microwave on high for about 2 minutes. Carefully remove, check the tenderness, flip the eggplant over, and microwave for another 2 minutes. You want the eggplant to be tender but still slightly firm (al dente) for the best texture in the salad. Cooking time may vary depending on your microwave’s wattage.
