Main Ingredients
  • 30 perilla leaves
  • 1 onion

Seasoning Ingredients
  • 2 Tbsp soy sauce
  • 1/2 Tbsp red pepper flakes (gochugaru)
  • 1/3 Tbsp minced garlic
  • 1/3 Tbsp ginger syrup
  • 1/3 Tbsp plum extract (maesilcheong)

Cooking Instructions

Step 1

First, wash the perilla leaves thoroughly under running water. After washing, use a salad spinner to remove excess moisture. This is crucial to ensure the seasoning adheres well and the leaves are flavorful, rather than watery.

Step 2

In a bowl, combine 2 Tbsp soy sauce, 1/2 Tbsp red pepper flakes, 1/3 Tbsp minced garlic, 1/3 Tbsp ginger syrup, and 1/3 Tbsp plum extract. Mix well to create a delicious seasoning sauce. You’ll have a balanced blend of sweet, savory, and slightly spicy flavors.

Step 3

Prepare a microwave-safe dish or container. Start by layering about 5-6 perilla leaves at the bottom. Then, add thinly sliced onion on top and spread the seasoning sauce evenly over it. Continue layering the perilla leaves, onion, and sauce until all ingredients are used. Layering in the order of perilla leaves – onion – sauce will work well.

Step 4

Now, cover the dish with a lid or plastic wrap and microwave for 1 minute for the first round. After 1 minute, check the texture. If it seems undercooked, microwave for another minute. A total of about 2 minutes should make the perilla leaves tender and the casserole perfectly cooked. Be careful not to overcook, as the leaves can become tough. Adjust the time as needed.
