Let’s start by preparing all the ingredients for our delicious pineapple pancakes. Using canned pineapple slices will make this recipe even easier and ensure a consistently tasty outcome. If you’re using fresh pineapple, peel it and slice it into appropriate thicknesses.

In a bowl, combine the pancake mix (150g) and milk (200ml). Whisk gently until smooth and well combined, forming your batter. (Tip: For an even softer pancake, you can substitute two eggs and use about 100ml of milk. If you don’t have eggs, using only milk is perfectly fine and results in a wonderfully chewy pancake.)

The ideal batter consistency is slightly thick. When you scoop it with a ladle, it should fall in a slow, thick stream. This ensures the pancakes hold their shape well without spreading too much or becoming too dense.

Now, heat a non-stick frying pan over medium-low heat. Add about 1 tablespoon of butter and let it melt to coat the pan. Be mindful of the heat; a pan that’s too hot can burn the pancakes quickly.

Pour a ladleful of batter (slightly less than a full ladle) onto the heated pan. Shape it into a circle slightly larger than your pineapple slice, creating a nice base for the fruit.
