Ingredients- 200g cooked rice (warm)
- 65g Spam (about 1/2 can)
- 2 large eggs
- 1 Tbsp soy sauce
- 2 Tbsp olive oil
- A pinch of sesame seeds (for garnish)
- A dash of parsley flakes (optional, for color)
Cooking Instructions
Step 1
First, lightly rinse the Spam under running water to remove any excess brine. Then, dice it into approximately 5-7mm thick cubes. Cutting it into consistent, bite-sized pieces will ensure even cooking and a pleasant texture.
Step 2
Heat 2 tablespoons of olive oil in a frying pan over medium heat. Add the diced Spam and stir-fry until it turns golden brown and slightly crispy. This step helps to render the fat and enhance the Spam’s savory flavor.
Step 3
Once the Spam is nicely browned, push it to one side of the pan to create space. Crack the 2 eggs directly into the empty space. Avoid breaking the yolks just yet.
Step 4
Before the eggs set completely, use a spatula or spoon to gently scramble them. Cook until they are just set but still moist and tender, avoiding overcooking which can make them rubbery.
Step 5
Push the scrambled eggs to the side with the Spam. Now, pour 1 tablespoon of soy sauce into the cleared space in the pan. Keep the heat on low to medium-low. Let the soy sauce simmer and reduce slightly until about half of its liquid remains, concentrating its flavor.
Step 6
Once the soy sauce has reduced, combine the scrambled eggs and fried Spam with the soy sauce in the pan. Stir everything together to ensure the sauce evenly coats all the ingredients.
Step 7
Add the 200g of warm cooked rice (about one bowl) to the pan. Reduce the heat to low. Using the back of your spoon or spatula, gently break up any clumps of rice and fluff it up. This ensures each grain is separated and will cook evenly without becoming sticky.
Step 8
After fluffing the rice, stir-fry everything together – the rice, Spam, eggs, and soy sauce mixture – until well combined and heated through. Use a gentle lifting and folding motion to mix without mashing the rice. Once everything is incorporated, turn off the heat. Taste the fried rice; if it’s not salty enough for your preference, you can add a tiny pinch of salt and mix it in.
Step 9
Finally, sprinkle a generous amount of sesame seeds over the fried rice for added flavor and visual appeal. A dash of parsley flakes can also be added for a touch of color. Your delicious Spam and Egg Fried Rice is now ready to be enjoyed!
