Main Ingredients
  • 2 eggplants

Seasoning
  • 1 Tbsp soup soy sauce (guk-ganjang)
  • 1/4 Tbsp seasoned salt (or a pinch of salt)
  • 2 Tbsp toasted sesame seeds (gaejam)
  • 1 Tbsp sesame oil
  • 0.5 Tbsp tuna extract (optional, can be substituted with more soup soy sauce)

Cooking Instructions

Step 1

First, thoroughly wash the 2 eggplants. Trim off the ends of the eggplants, then cut them into 2 or 3 pieces each. Place the cut eggplant pieces into a microwave-safe bag, leaving the top slightly open. Microwave for 3-4 minutes until the eggplant is tender. (Adjust cooking time based on eggplant size and microwave wattage.)

Step 2

Carefully remove the steamed eggplant from the microwave and let it cool completely. It’s important to let it cool down enough to handle safely, as it will be very hot. Once cooled, gently tear the eggplant into long strips, about 4 or 6 pieces per eggplant. Tearing by hand helps the seasoning to be absorbed more evenly and enhances the texture.

Step 3

In a bowl, combine the torn eggplant with all the seasoning ingredients. The seasonings are: 1 Tbsp soup soy sauce, 1/4 Tbsp seasoned salt, 0.5 Tbsp tuna extract, 2 Tbsp toasted sesame seeds, and 1 Tbsp sesame oil. (If you don’t have seasoned salt, use about 1/4 Tbsp of regular salt. If tuna extract is unavailable, you can add a little more soup soy sauce.)

Step 4

Gently mix and toss the eggplant with the seasonings using your hands until everything is well combined. Be careful not to overmix, as this can make the eggplant mushy. After mixing, taste the dish and adjust the seasoning to your preference with a little more salt or soup soy sauce if needed.

Step 5

Your soft and flavorful eggplant side dish is ready! It’s delicious mixed with warm rice or enjoyed on its own as a wonderful banchan (side dish). Enjoy your meal!
