Main Ingredients

  • 0.5 Tbsp minced garlic
  • 1 bunch garlic scapes (approx. 50g)
  • 1 bag bean sprouts (approx. 200g)
  • 1 bag bacon (approx. 100-150g)
  • 2 packs of Korean fish cakes (eomuk, approx. 200g)
  • 1/2 onion

Seasoning

  • 2-3 Tbsp soy sauce
  • 1-2 Tbsp corn syrup (adjust to taste)
  • Pinch of black pepper
  • 1 Tbsp oyster sauce
  • Pinch of salt

Cooking Instructions

Step 1

First, wash the garlic scapes thoroughly and cut them into 5cm lengths. Soak the cut garlic scapes in cold water for about 5 minutes. This helps maintain their crispiness and reduces any strong flavor. When draining, use a colander to ensure they are completely dry.

Step 2

Cut the Korean fish cakes into bite-sized pieces (about 2x5cm), and thinly slice the onion. Cut the bacon into 1cm thick pieces.

Step 3

Heat a frying pan over medium heat, add 1 Tbsp of cooking oil, and sauté the minced garlic (0.5 Tbsp) until fragrant. Be careful not to burn the garlic; lightly sautéing is key.

Step 4

Once the garlic is fragrant, add the sliced fish cakes and onion. Stir-fry them together. When the fish cakes and onion start to become translucent, season with a pinch of black pepper and a pinch of salt. Finally, drizzle 1 Tbsp of corn syrup around the edge of the pan and toss everything together until glossy. Your delicious stir-fried fish cakes are now complete!

Step 5

Place the drained garlic scapes into a colander and double-check that all excess water has been removed. Remaining moisture can cause oil to splatter during cooking.

Step 6

Heat a clean frying pan over medium heat with 1 Tbsp of cooking oil. Add 0.5 Tbsp of minced garlic and sauté until fragrant. Add the washed and drained bean sprouts and the cut bacon. Stir-fry until the bean sprouts just begin to wilt. The bacon will render its fat, adding delicious flavor. Towards the end, add 1 Tbsp of oyster sauce and mix quickly. Be careful not to overcook the bean sprouts, as they can become mushy. This makes a savory bacon and bean sprout stir-fry!

Step 7

Let’s make the garlic scape stir-fry. Heat a frying pan over medium heat and add a little cooking oil; this will help reduce splattering. Add 0.5 Tbsp of minced garlic and sauté until fragrant. Then, add the cut garlic scapes and stir-fry slowly over medium-low heat. It’s important to stir-fry them sufficiently until they soften slightly to ensure they are tender and delicious. Add 2-3 Tbsp of soy sauce and stir-fry to allow the garlic scapes to absorb the flavor.

Step 8

When the garlic scapes are tender, add 1 Tbsp of corn syrup and mix to coat everything evenly, giving it a nice sheen. Once the sweetness and gloss are added, turn off the heat to finish. And there you have it – three delicious side dishes!
