Inspired by a video of making meatballs, I thought they’d be wonderful in a spaghetti dish. I bought pre-made ‘Gourmet Tomato Meatballs’ and created this recipe. This dish offers a delightful combination of rich tomato sauce, chewy pasta, and tender meatballs, sure to awaken your appetite. Main Ingredients

  • Gourmet Tomato Meatballs, 1 pack (approx. 250g)
  • Onion, 1 handful (approx. 1/2 medium)
  • Mushrooms (e.g., King Oyster or Button), 1 handful (approx. 50g)
  • Bacon, a small amount (optional, for added flavor)
  • Canned corn or cooked corn kernels, 1/2 cup
  • Spaghetti, for 2 servings (approx. 200g)
  • Butter, 1/2 Tbsp
  • Scallions or Green Onions, 1 handful (for garnish)

Tomato Meatball Sauce

  • Ketchup, 4 Tbsp
  • Vinegar, 1.5 Tbsp (adjust for tanginess)
  • Soy Sauce, 2.5 Tbsp
  • Sugar, 0.5 Tbsp (adjust for sweetness)
  • Black Pepper, a pinch
  • Peperoncino, 3 pieces (adjust for spice, remove seeds)

Cooking Instructions

First, bring a large pot of water to a rolling boil. Once boiling, add the spaghetti noodles. It’s best to cook them for 1-2 minutes less than the package instructions, aiming for ‘al dente’. While the pasta cooks, let’s prepare the other ingredients.

Now, let’s make the tomato meatball sauce. In a bowl, combine 4 Tbsp ketchup, 1.5 Tbsp vinegar, 2.5 Tbsp soy sauce, and 0.5 Tbsp sugar. Mix them well. Add a pinch of black pepper for extra aroma.

Feel free to use whatever vegetables you have on hand! Thinly slice the onion and chop the mushrooms into bite-sized pieces. If using canned corn, drain it; otherwise, use cooked corn kernels. If you don’t have corn or prefer not to use it, you can simply omit it.

Heat a pan over medium heat and melt 1/2 Tbsp of butter. This will add a lovely richness to the dish.

Once the butter is melted, add the prepared onion, mushrooms, corn, and bacon (if using). Sauté until the vegetables are tender and slightly golden. This step brings out the natural sweetness of the vegetables, making the sauce even more delicious.

For a touch of heat, add the peperoncino. For a more even distribution of spice, it’s a good idea to crush them slightly before adding. If you’re cooking for children or prefer milder flavors, you can omit them or use fewer.

Add the drained spaghetti to the pan with the vegetables and meatballs. Pour in the sauce and toss everything together thoroughly. Ensure the sauce coats the noodles evenly. If the pasta seems too dry or sticky, gradually add the reserved pasta water, a little at a time, until it reaches a silky, well-coated consistency.
