How to Make Delicious Zucchini and Crab Stick Pancakes
Here’s a simple and satisfying zucchini and crab stick pancake recipe, perfect for a cozy day indoors. This dish combines the natural sweetness of zucchini with the savory, slightly chewy texture of crab sticks, all coated in a light, crispy batter. It’s a quick and easy treat that’s great for snacks or a light meal.
Ingredients- 1/2 medium zucchini (approx. 200g)
- 2 large eggs
- 2 imitation crab sticks (surimi)
- 5 tablespoons cornstarch (or potato starch)
- Pinch of salt
- 1/2 tablespoon sesame oil

Step 1
Wash the zucchini thoroughly and trim off the ends. Slice it lengthwise about 0.5 cm thick, into half-moon or elongated shapes. Sprinkle a pinch of salt over the sliced zucchini and let it sit for about 10 minutes. This process draws out excess moisture, resulting in a firmer, tastier pancake.
Step 2
Gently shred the imitation crab sticks lengthwise with your fingers. Avoid shredding them too finely; slightly larger pieces will provide a better texture.

In a bowl, crack the 2 eggs. Add a pinch of salt (about two small pinches) and the 1/2 tablespoon of sesame oil. Whisk gently until well combined and the egg whites are broken up. The sesame oil adds a lovely nutty aroma.

After 10 minutes, lightly pat the salted zucchini slices with a paper towel to remove excess water. Dredge each zucchini slice evenly in the cornstarch, coating all sides. Then, dip the cornstarch-coated zucchini into the whisked egg mixture, ensuring it’s well coated. Heat a generous amount of cooking oil in a frying pan over medium-low heat. Once the oil is hot, carefully place the egg-coated zucchini slices into the pan.

Once the zucchini starts to become slightly translucent and lightly golden, place the shredded crab sticks on top of each zucchini slice. Cook for a few minutes until the zucchini is golden brown on the bottom, then carefully flip the pancakes. Cook the other side until it’s also golden brown and the crab sticks are heated through.
