  • 1/2 cup water
  • 1 Tbsp sesame oil

Cooking Instructions

Step 1

Prepare all your ingredients before you begin! Fresh ingredients are the start of a delicious meal.

Step 1

Step 2

Finely mince the onion and thinly slice the scallions. Chopping the vegetables finely helps them blend well with the filling.

Step 2

Step 3

Wash the eggplant and cut it into thick, 2-3 cm slices. Cutting them into appropriate sizes will help them maintain their shape when fried.

Step 3

Step 4

To hollow out the eggplant, carefully use a spoon or a paring knife to scoop out the inner flesh. This creates space to stuff the beef filling.

Step 4

Step 5

After hollowing out the eggplant, handle it gently to prevent the sides from breaking.

Step 5

Step 6

In a bowl, place the domestic ground beef. Season lightly with salt and pepper. Add the minced onion and the egg yolk (not the white) and knead thoroughly with your hands until the mixture becomes cohesive. This step makes the beef filling tender and delicious.

Step 6

Step 7

Firmly press the kneaded beef mixture into the hollowed-out eggplant pieces. Stuffing generously ensures a satisfying bite.

Step 7

Step 8

Lightly and evenly coat the stuffed eggplant with cornstarch. This helps the batter adhere better and results in a crispier fried texture.

Step 8

Step 9

In a separate bowl, combine 1 Tbsp cornstarch, 1 Tbsp frying powder, and 1 egg white. Gradually add cold water while whisking to create a batter. Aim for a consistency that thinly coats the eggplant – not too thick or too thin.

Step 9

Step 10

Heat cooking oil in a pot to 180°C (350°F). Carefully place the stuffed eggplant pieces into the hot oil and fry until golden brown on all sides. Ensure they are cooked through.

Step 10

Step 11

In a small saucepan, combine the chili sauce ingredients (gochujang, ketchup, soy sauce, sugar, hot sauce) and 1/2 cup of water. Stir well and bring to a simmer over medium-low heat. Once the sauce thickens, gradually add a slurry of cornstarch mixed with water to achieve your desired consistency. This will create a glossy chili sauce.

Step 11

Step 12

Now, let’s prepare the ingredients for the ‘Beef Tartare’! Use fresh Korean beef to create a special appetizer.

Step 12

Step 13

Prepare the accompaniments for the tartare: thinly slice 1 radish, finely mince some onion and scallions. Prepare about 3 black olives, and 3 boiled quail eggs.

Step 13

Step 14

Prepare your Korean beef (skirt steak works well), slicing it thinly against the grain. In a bowl, combine the sliced beef, minced onion, minced scallions, sliced black olives, 1 tsp olive oil, 1 tsp hot sauce, sesame oil, salt, and pepper. Gently mix to season. Be careful not to overmix.

Step 14

Step 15

Arrange the prepared beef tartare and the fried eggplant tangsuyuk attractively on a plate for plating. Paying attention to color and presentation will make the dish even more appealing.

Step 15

Step 16

Generously pour the warm chili sauce over the crispy fried eggplant tangsuyuk stuffed with beef. Finish by scattering thinly sliced scallions over the top. The fresh scallion aroma adds a wonderful touch to the flavor.

Step 16

Step 17

Since this dish is fried quickly, it retains more nutrients, and the natural juiciness of the beef remains intact, making it exceptionally delicious!

Step 17

Step 18

Enjoy a delicious and healthy meal today with fresh Korean beef!
