- 1 Tbsp Perilla oil
- A pinch of salt
- 1 Tbsp Miso paste

Cooking Instructions
Step 1
Begin by preparing the eggplant. Cut the eggplant into 2 or 3 equal lengths to create steak-like portions. Aim for pieces that are easy to handle and cook evenly.

Lightly score the cut surfaces of the eggplant with a knife. Sprinkle a pinch of salt over the scored parts and let it sit for 5 minutes. This process, known as ‘curing,’ draws out excess moisture, resulting in a chewier texture and better sauce absorption. After 5 minutes, thoroughly pat the eggplant dry with paper towels to remove any surface moisture.
Step 3
Heat a skillet over medium heat and add the perilla oil. Place the prepared eggplant pieces in the hot skillet and sear them until golden brown on both sides. Continue cooking, flipping occasionally, until the eggplant is tender and beautifully caramelized. This searing process enhances the natural sweetness of the eggplant.
Step 4
Once the eggplant is nicely seared, brush the prepared miso glaze evenly over the surfaces of the cooked eggplant. Reduce the heat to low and cook for another minute or two, allowing the glaze to adhere and meld with the eggplant. Be careful not to burn the glaze.
