Main Ingredients

  • 200g thinly sliced beef for shabu-shabu (or thinly sliced brisket)
  • 2 packs enoki mushrooms
  • 10 Korean perilla leaves (깻잎)
  • 1/2 bunch garlic chives (부추)
  • 1 pack bean sprouts (숙주)

Cooking Instructions

Step 1

Begin by preparing the vegetables. Wash the garlic chives thoroughly and cut them into approximately 10cm lengths. Trim the tough bottom part of the enoki mushrooms and separate the strands. Clean the Korean perilla leaves by trimming their stems and any rough edges.

Step 1

Step 2

If your beef is frozen, take it out at room temperature to slightly thaw. This will make it easier to roll and ensure the meat is tender when cooked.

Step 2

Step 3

Lay out the beef slices. Place one perilla leaf on top of each beef slice. Then, arrange a portion of the prepared enoki mushrooms and garlic chives onto the perilla leaf. Tightly roll them up, similar to how you would roll a kimbap (Korean seaweed rice roll). Once rolled, cut each roll in half to a manageable size of about 2-3 cm. This makes them easier to handle and cook.

Step 3

Step 4

Line the bottom of your steamer with a generous layer of washed bean sprouts. The bean sprouts will absorb the delicious juices released from the beef during steaming, keeping the rolls moist and flavorful. Arrange the prepared beef rolls on top of the bean sprouts. Cover the steamer and steam for about 10 minutes, or until the beef is fully cooked and the vegetables are tender. The steam should be visibly rising.

Step 4

Step 5

While the rolls are steaming, prepare two dipping sauces to enhance the flavor. A simple soy sauce dip can be made by mixing soy sauce, vinegar, sugar, minced garlic, and sesame oil. For a richer, nutty flavor, you can prepare a peanut sauce using peanut butter. Feel free to add a touch of wasabi or finely chopped chili peppers to either sauce for an extra kick.

Step 5

Step 6

Arrange the perfectly steamed beef rolls and vegetables attractively on a serving plate. Serve immediately with the prepared dipping sauces on the side. Dipping these tender rolls into the sauces will unleash a burst of rich flavors and aromas, making this dish a true highlight of your home party!
