Shabu-Shabu Ingredients
  • Fresh Beef (for Shabu-Shabu) 500g
  • Bok Choy 300g
  • King Oyster Mushrooms 3 packs
  • Oyster Mushrooms 2
  • Bell Peppers (red and yellow) 1/2 each
  • Cucumber 1/2
  • Onion (for pickling) 1/2
  • Broccoli 1/2
  • Pineapple (cut into bite-sized pieces) as needed

Refreshing Shabu-Shabu Broth
  • Water 1000ml
  • Dried Kelp 3 pieces (approx. 10cm x 10cm)
  • Dried Anchovies or Dried Pollack Fish 6
  • Radish 1/2 piece (approx. 5cm x 5cm)
  • Dried Shiitake Mushroom Stems 1 handful (dried)
  • Soy Sauce or Salt (for seasoning) to taste
  • Minced Garlic 1/2 tsp (optional)

Cooking Instructions

Step 1

First, we’ll prepare the broth, which is key to a delicious shabu-shabu. In a pot, combine 1000ml of water, 3 pieces of dried kelp, 6 dried anchovies (or pollack fish), 1/2 piece of radish, and a handful of dried shiitake mushroom stems. Bring to a boil over high heat. Once boiling, remove the kelp and continue to simmer for about 10-15 minutes to allow the flavors to fully infuse. Strain the broth through a fine-mesh sieve for a clear liquid. Season the strained broth with soy sauce or salt to your preference. If you like, add a little minced garlic to enhance the aroma. Now that your flavorful broth is ready, let’s prepare the remaining ingredients while it simmers!

Step 2

Now, it’s time to prepare the ingredients that will make your shabu-shabu even more delightful. First, let’s get the vegetables ready to cook in the broth. Wash the bok choy thoroughly and cut it into manageable pieces. Trim the base of the king oyster mushrooms and oyster mushrooms, then separate them into strands or leave them whole. (If you enjoy a chewy texture, king oyster mushrooms are excellent! If you have Napa cabbage at home, it’s also a delicious addition.) Next, prepare the thinly sliced beef for shabu-shabu, along with the rice paper wrappers and an assortment of fresh vegetables to accompany them. Julienne the cucumber and slice the red and yellow bell peppers into similar lengths. Cut the broccoli into bite-sized florets and thinly slice the onion. Slice the pineapple into enjoyable bite-sized pieces. You can also add perilla leaves or other fresh greens according to your taste. Arranging all these ingredients beautifully will complete a stunning shabu-shabu spread, worthy of any restaurant!

Once the prepared broth is simmering, it’s time to add the vegetables. I particularly love bok choy and mushrooms, so I’ve prepared a generous amount of them. Add the bok choy and the prepared mushrooms to the boiling broth and cook them briefly until they are slightly wilted. To maintain a crisp texture, avoid overcooking them; just cook them until tender-crisp and then remove them.

Step 4

When the vegetables are cooked to your liking, it’s time for the most anticipated part! Add the fresh beef slices to the broth, one by one, allowing them to cook. Thinly sliced beef cooks very quickly; as soon as the pink color disappears and it turns a tender pinkish-brown, remove it immediately. Enjoy this cooked beef along with the previously cooked vegetables, and wrap them in your favorite fresh greens with your chosen dipping sauce. The combination of tender meat and crisp vegetables is simply divine!

Step 5

Now it’s time to enjoy your shabu-shabu to your heart’s content! Lightly dip the rice paper wrappers in lukewarm water until pliable. Then, layer them with your favorite fresh vegetables, the cooked beef from the shabu-shabu, mushrooms, and any other ingredients you desire. Roll them up generously to create delicious wraps.
