  • 3 eggplants
  • 1 Tbsp olive oil

  • 0.5 Tbsp perilla oil
  • 1 Tbsp plum extract
  • 5 Tbsp soy sauce
  • 0.5 Tbsp dried basil (optional)

Cooking Instructions

Step 1

First, thoroughly wash the fresh eggplants under running water. Pat them dry, then place them on a cutting board and slice them into bite-sized pieces. Cutting them into pieces that are easy for children to eat in one bite or convenient to pick up with chopsticks is recommended.

Step 2

Heat a frying pan over medium heat and add 1 Tbsp of olive oil. You can also use vegetable oil if you prefer.

Step 3

Once the pan is warm, place the sliced eggplants and grill them until golden brown on both sides. As the moisture evaporates, the eggplant will become chewy on the outside and tender on the inside. Be careful not to burn them by adjusting the heat as needed.

Step 4

While the eggplants are gradually turning a delicious brown color, it’s time to prepare the elegant sauce. Keep an eye on the eggplants to prevent burning as you get your ingredients ready.

Step 5

In a small bowl, combine 0.5 Tbsp toasted sesame seeds, 0.5 Tbsp perilla oil, 1 Tbsp plum extract, and 5 Tbsp soy sauce. Mix well. If you prefer a spicier taste, you can add a little finely chopped chili pepper or red pepper flakes. I added 0.5 Tbsp of dried basil for an aromatic touch, and its unique flavor paired wonderfully with the eggplant, creating a delightful aroma in the mouth. If you’re not a fan of basil, feel free to omit it.

Step 6

Arrange the nicely grilled eggplants neatly on a serving plate. Let them cool slightly while you get the sauce ready.

Step 7

The finished grilled eggplant is delicious served warm, but it’s even more flavorful with the sauce. You can either drizzle the sauce directly over the eggplant or dip the eggplant into the sauce. I personally found drizzling it on top to be more convenient and enjoyable. Because it’s grilled, you can truly enjoy a chewy texture without the usual mushiness of eggplant, and the presentation is beautiful, making for a very satisfying dish.
