Sushi Rice
  • 2 bowls of warm cooked rice

Tamagoyaki (Rolled Omelet) Ingredients
  • 2 large eggs
  • 1 tsp sugar
  • 1 tbsp mirin (or sake)
  • A pinch of salt
  • 1 tbsp cooking oil

Sushi Vinegar Seasoning
  • 1 tbsp rice vinegar
  • 1 tsp sugar
  • A pinch of salt

Spam Sushi Ingredients
  • 1/2 can Spam
  • 1 tsp sugar
  • 1 tbsp mirin (or sake)
  • 1 tsp soy sauce

Cooking Instructions

Step 1

First, prepare the ingredients for the Tamagoyaki (rolled omelet). In a bowl, crack 2 large eggs. Add 1 tsp sugar, 1 tbsp mirin (or sake), and a pinch of salt. Whisk everything together thoroughly with a fork or a whisk until well combined. Removing the chalazae (the white stringy bits) will result in a smoother omelet.

Step 2

Heat a non-stick pan over medium heat. Add 1 tbsp of cooking oil and spread it thinly across the pan using a paper towel to create a non-stick surface. Pour a thin layer of the egg mixture into the pan to form a thin omelet. Once set, carefully roll it up using a sushi mat or chopsticks. For a thicker, more appealing omelet, it’s best to roll it in thin layers rather than all at once. Let the rolled omelet cool slightly, then slice it into approximately 4 equal portions, each about 2-3 cm thick.

Step 3

Now, let’s prepare the sushi rice. To 2 bowls of warm cooked rice, add the sushi vinegar seasoning: 1 tbsp rice vinegar, 1 tsp sugar, and a pinch of salt. Using a rice paddle or spatula, gently mix the seasoning into the rice, being careful not to mash the grains. Ensure the seasoning is evenly distributed throughout the rice.

Step 4

Take a portion of the seasoned sushi rice into your hands. Gently shape it into your desired form, such as an oval or a rectangle, without pressing too hard. Lightly wetting your hands with water or vinegar water can prevent the rice from sticking.

Step 5

Cut the nori sheet into strips that are long enough to wrap around the sushi. The width of the nori strip should be just enough to encircle the sushi.

Step 6

Place a slice of the prepared Tamagoyaki on top of the shaped sushi rice. Wrap a nori strip around it to secure the omelet, completing your elegant Tamagoyaki sushi! A neat nori strip enhances the presentation.

Step 7

To make the Spam sushi, prepare the glaze. In a small bowl, combine 1 tsp sugar, 1 tbsp mirin (or sake), and 1 tsp soy sauce. Stir well until combined.

Step 8

Slice the Spam into bite-sized pieces suitable for topping sushi. Heat a pan over medium-low heat and cook the Spam slices until they are golden brown on both sides. Lightly searing the Spam can render out some of the fat, making it taste less greasy.

Step 9

Once the Spam is nicely browned, pour the prepared glaze into the pan. Stir-fry quickly over medium heat, ensuring the Spam is coated evenly with the glaze. Be careful not to overcook, as the Spam can become tough.

Step 10

Finally, place a piece of the glazed Spam on top of the sushi rice and wrap it with a nori strip for a neat finish. Your delicious Spam sushi is ready! Enjoy both types of sushi together for a delightful meal.
