Basic Batter Ingredients

  • 3 large eggs, at room temperature
  • 150g granulated sugar
  • 180g cake flour, sifted
  • 1 tsp baking powder
  • 2 Tbsp milk, at room temperature

  • 10g matcha powder
  • 30g almond flour
  • 1 Tbsp milk, at room temperature

Cooking Instructions

Step 1

Before you begin baking, it’s essential to measure out all your ingredients accurately and ensure they are at room temperature (butter, eggs, milk). This step is crucial for achieving a consistent batter texture.

Step 2

In a mixing bowl, cream the softened butter until it reaches a mayonnaise-like consistency. Gradually add the sugar and salt in two to three additions, mixing well after each addition. Continue to mix until at least 80% of the sugar has dissolved. Ensure there are no large sugar granules remaining for a smoother cake.

Step 3

Once the sugar is well incorporated, add the room temperature eggs one at a time, mixing rapidly after each addition to prevent the batter from separating. It’s important to mix quickly to maintain an emulsified mixture. Add the next egg only after the previous one is fully incorporated.

Step 4

When the eggs are fully blended, add the sifted cake flour and baking powder to the bowl. Gently fold the dry ingredients into the wet ingredients using a spatula until about 80% of the flour is incorporated. Be careful not to overmix, as this can lead to a tough cake. If using, fold in the chocolate chips or nuts at this stage until just combined.

Step 5

Take approximately one-third of the basic batter (prepared in step 3) and place it in a separate bowl. To this portion, add the matcha powder, almond flour, and 1 tablespoon of milk. Mix these ingredients together until you have a smooth, uniform matcha-colored batter.

Step 6

Now, it’s time to create the beautiful marble effect. Combine the basic batter and the matcha batter in the prepared pound cake pan. Gently swirl the two batters together with a spatula, mixing only two or three times. Overmixing will cause the colors to blend completely, losing the marbling. Aim for distinct streaks of color.

Step 7

Once the batter is in the pan, prepare it for baking. Create a shallow indentation in the center of the batter and build up the sides slightly, forming a wide ‘U’ shape. This technique helps ensure the cake rises evenly in the center during baking. Use a lined pound cake pan (25*7*6 cm).

Step 8

Bake in a preheated oven at 180°C (350°F) for 10 minutes. Then, carefully remove the cake from the oven. Using a knife lightly greased with oil, make a long cut down the center of the cake’s surface. Return the cake to the oven and continue baking for another 35-40 minutes, or until a skewer inserted into the center comes out clean.
