Ingredients
- 2 Tortillas
- 4 Fresh Eggs
- 2 Button Mushrooms
- 2 Slices of Cheese
- 2-4 Tbsp Tomato Sauce
- 4 Pinches of Salt
- Pinch of Black Pepper

Step 1
Begin by preparing all your ingredients. Wash the mushrooms gently under running water to remove any dirt. Crack the eggs into a clean bowl.

In the bowl with the eggs, add 4 pinches of salt and a pinch of black pepper. Whisk gently with a fork or whisk until the egg yolks and whites are well combined. Don’t over-whisk, just until incorporated.

Carefully peel the thin skin off the button mushrooms. Then, slice them thinly into uniform pieces, about 0.3 cm thick. Avoid slicing them too thickly, as this will affect cooking time and texture.
