Today, I’m sharing a sushi recipe that my son absolutely loves. This is a homemade salmon and shrimp sushi that we often make. I’ll show you a super simple method to create incredibly delicious sushi right in your own kitchen. ^^

Rice and Sushi Vinegar

  • 3 bowls of cooked rice (approximately)
  • 3 Tbsp rice vinegar
  • 1.5 Tbsp sugar
  • 1/2 tsp salt
  • A splash of lemon juice

Main Ingredients

  • 14 slices of smoked salmon
  • 12 shrimp, peeled and deveined

Toppings and Sauce

  • 1/2 small onion, finely minced
  • 1 Tbsp mayonnaise
  • 1/2 tsp wasabi mayonnaise (optional)
  • A few drops of lemon juice
  • A pinch of capers

Cooking Instructions

Step 1

Let’s start by preparing the rice. Cooking the rice with a piece of kombu (kelp) will enhance its flavor significantly. Prepare about 3 bowls of cooked rice. Next, we’ll make the sushi vinegar, which is crucial for sushi. In a small bowl, combine 3 tablespoons of rice vinegar, 1.5 tablespoons of sugar, 1/2 teaspoon of salt, and a splash of lemon juice. Stir until the sugar and salt are completely dissolved. For the shrimp, thoroughly remove the devein, make a slit down the belly, and then blanch them in boiling water until just cooked. The smoked salmon is ready to use as is.

Now, let’s prepare the delicious toppings for our sushi. Finely slice or mince the fresh onion. Also, get your capers, creamy mayonnaise, and refreshing lemon juice ready. Wasabi mayonnaise adds a slightly spicy and creamy kick, but you can certainly skip it if it’s not available.

Finely slice or mince the prepared onion. This onion will cut through the richness of the sushi and add a fresh flavor.

In a small bowl, combine 1 tablespoon of mayonnaise and 1/2 teaspoon of wasabi mayonnaise. Mix them together until smooth. If you don’t have wasabi mayonnaise, you can mix a tiny amount of regular wasabi paste with regular mayonnaise.

Finally, add a couple of drops of lemon juice to the mayonnaise mixture for an extra touch of freshness and mix well. This sauce will elevate the overall flavor of your sushi.

Gently mix the prepared sushi vinegar into the warm cooked rice using a rice paddle, being careful not to mash the grains. Mixing while the rice is still warm helps it absorb the vinegar evenly. Once the rice has cooled slightly, form it into bite-sized portions. You can optionally add a small dab of wasabi on top of each rice ball, adjusting the amount to your preference.

Now it’s time to top the sushi rice. Arrange the cooked shrimp and slices of smoked salmon attractively on top of each formed rice ball. Overlapping the salmon slices or placing them at a slight angle can make them look even more appealing.
