Tangy Beetroot Dressing Ingredients- 4 Tbsp pureed roasted beetroot (approx. 50g)
- 4 Tbsp orange juice
- 1 Tbsp grapeseed oil (or olive oil)

Cooking Instructions
Step 1
Start by preparing the baby greens. Rinse them thoroughly under cool running water to remove any dirt or debris. Drain them well in a colander; it’s important to remove excess water so the greens stay fresh and crisp.

Infuse the oil with garlic flavor. Heat a generous amount of olive oil in a pan over medium-low heat. Add thinly sliced garlic and fry until golden and crispy, being careful not to burn it. This fragrant oil can be used for cooking the salmon, and the crispy garlic can be used as a garnish.

Now, it’s time to cook the star of the dish: the salmon. Season the salmon fillet lightly with salt and pepper on both sides. Place the salmon in the pan with the garlic-infused oil (add a little more oil if needed) over medium heat. Sear for about 3-4 minutes per side, or until golden brown and cooked through. Adjust the cooking time based on the thickness of your salmon fillet. Be careful not to overcook, as this can make the salmon dry.

While the salmon is cooking, prepare the beetroot. Peel the beetroot and cut it into cubes, about 1-2 cm in size. Add the cubed beetroot to the same pan where you cooked the salmon (add a little oil if necessary) over medium heat. Sauté the beetroot until it becomes slightly tender, allowing its natural sweetness to emerge.

Let’s make the delicious beetroot dressing! Take about 50g of the sautéed beetroot and set it aside. Place this beetroot in a blender (or use an immersion blender). Add 4 tablespoons of orange juice, 1 tablespoon of grapeseed oil, and a pinch of salt. Blend until smooth and well combined. The orange juice adds a lovely tanginess that complements the earthy beetroot, while the oil creates a smooth, emulsified dressing.
Step 6
Now, assemble your beautiful salmon steak! Arrange a bed of fresh baby greens on a plate. Place the perfectly seared salmon steak on top. Add the sautéed beetroot alongside the salmon.
