Main Ingredients- 1 pack Cocktail Shrimp (approx. 20 pieces)
- 1 ripe Tomato
- A handful of fresh Baby Leaf Greens
- 3 cloves Garlic
- Pinch of Black Pepper
- 1 fresh Lime

Step 1
Wash the tomato and cut it into 4 wedges. Heat a pan over medium-high heat and grill the tomato wedges until their surfaces are lightly caramelized. Set the grilled tomatoes aside. Meanwhile, place one of the grilled tomato wedges in the pan and gently mash it. This process enhances the sweetness of the tomato.
Step 2
Add a little olive oil to the same pan used for the tomatoes. Scrape up the delicious caramelized tomato bits stuck to the bottom of the pan, mixing them with the mashed tomato. This step deepens the tomato’s flavor and forms the base of your sauce.

Now, take another clean pan and add the cocktail shrimp. Grill them over medium heat until they are nicely browned on both sides. While the shrimp are cooking, finely mince or crush the 3 cloves of garlic. Add the crushed garlic to the first pan (with the tomato mixture) and reduce the heat to low to start infusing its aroma.

Transfer the golden-brown shrimp from their pan to the pan with the aromatic garlic and tomato mixture. Stir and sauté over medium heat, ensuring the shrimp are well coated with the sauce and flavors meld together. Season with salt and pepper to your taste. It’s important to sauté until the shrimp are nicely coated and the sauce is absorbed.

Your dish is almost ready! Arrange the cooked shrimp, sautéed tomatoes, and fresh baby leaf greens attractively on a plate or serving platter.
