Main Ingredients
  • 4 bunches fresh spinach (washed and trimmed)
  • 8 strips thick-cut bacon (chopped)
  • 1/2 yellow onion (finely diced)
  • 13 cocktail shrimp (peeled, deveined, and thawed)
  • 5 cherry tomatoes (halved)
  • 1 cup shredded mozzarella cheese
  • 4 large eggs
  • 1/2 cup milk

Other Ingredients
  • 2 tablespoons butter
  • Salt to taste
  • Black pepper to taste

Cooking Instructions

Step 1

First, thoroughly wash the spinach, removing any roots. Give it a good rinse under running water. Once drained, chop the spinach into bite-sized pieces, about 3-4 cm long. This ensures a pleasant texture when cooked.

Step 2

Melt the butter in a skillet over medium heat. Add the diced onion and chopped bacon to the skillet. Sauté until the bacon is crispy and the onions are softened and translucent, releasing their sweet aroma.

Step 3

Once the onions and bacon are nicely cooked, add the chopped spinach to the skillet. Stir gently and cook until the spinach wilts and becomes tender. Be careful not to overcook it; it should just be wilted.

Step 4

Transfer the cooked mixture of onions, bacon, and spinach into an oven-safe skillet or baking dish. Arrange the cocktail shrimp evenly over the top of the mixture. The shrimp will cook and add a delightful sweetness.

Step 5

In a separate bowl, whisk together the 4 large eggs and 1/2 cup of milk. For a smoother texture, strain the egg mixture through a fine-mesh sieve 2-3 times to remove any chalazae or unincorporated whites. This ensures a silky smooth frittata.

Step 6

Gently pour the strained egg mixture evenly over the ingredients in the baking dish. Arrange the halved cherry tomatoes on top for a burst of color and freshness. They add a lovely visual appeal.

Step 7

Finally, sprinkle the shredded mozzarella cheese generously and evenly over the entire frittata. The cheese will melt into a golden, bubbly topping, adding a rich, creamy flavor.

Step 8

Preheat your oven to 190°C (375°F). Place the baking dish in the preheated oven and bake for approximately 30 minutes. Cooking time may vary depending on your oven, so keep an eye on it until it’s golden brown and set.

Step 9

To check if the frittata is done, insert a toothpick into the center. If it comes out clean, the frittata is fully cooked. Serve warm and enjoy this delicious Italian-inspired dish!
