Main Ingredients- 1 Squid
- 30g Carrot
- 30g Yellow Bell Pepper
- 30g Red Bell Pepper
Braising Sauce- 1/2 cup Water (approx. 100ml)
- 2 Tbsp Soy Sauce
- 0.5 Tbsp Oyster Sauce
- 2 Tbsp Oligodang (Korean corn syrup) or Honey
- 2 Tbsp Mirin (Cooking Sake)
- Pinch of Black Pepper
- 1/2 cup Water (approx. 100ml)
- 2 Tbsp Soy Sauce
- 0.5 Tbsp Oyster Sauce
- 2 Tbsp Oligodang (Korean corn syrup) or Honey
- 2 Tbsp Mirin (Cooking Sake)
- Pinch of Black Pepper
Cooking Instructions
Step 1
Prepare all your ingredients. Ensure the squid is fresh, and wash all vegetables thoroughly.
Step 2
Clean the squid by removing the outer skin from the body. Then, make straight, parallel cuts only on the inside of the squid body. This scoring will help the sauce penetrate better and improve the texture.
Step 3
Carefully place the scored squid body into boiling water and blanch for just about 1 minute. Overcooking will make it tough, so be mindful of the time. Once blanched, immediately rinse with cold water to cool it down. Trim off the triangular head part from the body.
Step 4
Remove the seeds from the bell peppers and julienne them into thick strips. Slice the carrot into thinner julienne strips compared to the bell peppers for a harmonious texture.
Step 5
Stuff the blanched squid bodies with the julienned bell peppers and carrots. Roll the squid tightly like a sushi roll, ensuring the filling stays inside. Secure the roll with toothpicks or skewers to prevent it from unraveling.
Step 6
In a small pot or pan, combine all the braising sauce ingredients (water, soy sauce, oyster sauce, oligodang, mirin, and pepper). Bring to a boil over high heat. Once boiling, carefully add the stuffed squid rolls. Reduce the heat to medium-low and spoon the sauce over the squid rolls as they simmer, allowing them to braise evenly. Keep an eye on the heat to prevent the squid from burning.
Step 7
Continue to braise until the sauce has reduced and coats the squid rolls with a glossy sheen. This indicates that the delicious stuffed and braised squid rolls are ready. Braising until the sauce is almost gone will result in a more intense flavor.
Step 8
Slice the finished squid rolls into bite-sized pieces and arrange them on a serving plate. Drizzle any remaining delicious sauce over the rolls. Garnish with a few baby greens for a beautiful presentation. Enjoy this delightful dish with a side of warm rice!
