Ingredients

  • 1 slice of bread or baguette (slightly stale is perfect!)
  • 1 ripe banana
  • 60 ml milk
  • 40 ml heavy cream (optional, omit if unavailable and increase milk to 100ml)
  • 1 fresh egg
  • Pinch of salt
  • Sugar (to taste)
  • Sugar (for topping, cinnamon sugar is also great!)
  • Pinch of cinnamon powder
  • 1/2 Tbsp butter (for greasing the oven dish)

Cut your bread or baguette into bite-sized pieces and arrange them in the prepared dish. Don’t worry if the bread is a bit stale; it will absorb the custard mixture beautifully, resulting in a wonderfully moist pudding.

In a medium bowl, crack the egg and whisk it lightly until the yolk and white are combined.

Pour the milk and heavy cream into the whisked egg. (If you don’t have heavy cream, simply use 100ml of milk. You can also substitute with soy milk for a different flavor profile!) Add a pinch of salt to balance the sweetness.

Pour the milk and egg mixture evenly over the bread in the dish. Gently press down the bread with a spoon or spatula to ensure it’s thoroughly soaked. Let it sit for about 5-10 minutes to allow the bread to absorb the liquid fully.

Peel and slice the banana, then arrange the slices attractively over the soaked bread. The natural sweetness of the banana will enhance the pudding’s flavor.
