Main Ingredients- Beef (for Bulgogi, e.g., front leg cut) 200-300g
- Enoki mushrooms (small package) 1.5 packages
- Onion 1 medium
- Perilla leaves 5-6 leaves
- Green onion (leaf part) 2 stalks

- Cooking wine or Mirin 1 Tbsp
- Herbal salt 1 tsp (or salt)

Cooking Instructions
Step 1
First, trim the base of the enoki mushrooms, rinse them lightly under running water, and drain well. Separate the mushrooms into individual strands. Slice the onion into thick strips, and wash and roughly chop the perilla leaves and green onion leaves.

It’s best to use beef sliced thinly for bulgogi. If using a thicker cut, slice it thinly. Separate any long, stuck-together pieces of beef into bite-sized portions. Slice the onion not too thinly so it retains some texture when stir-fried.

Heat olive oil in a wide, deep pan (like a wok or a large skillet) over medium heat. Add the roughly chopped green onion leaves and stir-fry for about 20-30 seconds until fragrant. This infuses the oil with a subtle onion aroma, adding extra flavor.
Step 4
Add the prepared beef to the pan and pour in 1 Tbsp of cooking wine (or mirin) to help tenderize and remove any gamey smell. Stir-fry the beef just until the outside changes color. Then, add the sliced onion, enoki mushrooms, and perilla leaves. Season with herbal salt (or regular salt). It’s crucial to stir-fry quickly over high heat only until the onions become translucent. Overcooking will release too much moisture from the vegetables.
