  • 1 Tbsp Soy sauce

  • 1 Tbsp Minced green onion

First, prepare 200g of enoki mushrooms and 2 eggs for cooking. Preparing fresh ingredients is the beginning of a delicious dish.

Rinse the enoki mushrooms thoroughly under running water and trim off the base. Then, finely chop them into pieces about 0.5cm thick. This will help them mix well into the batter and improve the texture.

In a large bowl, place the chopped enoki mushrooms. Add 3 tablespoons of potato starch, 1 tablespoon of soy sauce, and freshly ground black pepper (about 6 twists from a grinder, or use pre-ground pepper). Mix these ingredients well with your hands, coating the enoki mushrooms with the starch and soy sauce mixture. Finally, crack in 2 eggs and mix everything together until a cohesive batter is formed. Continue mixing until it has a slightly sticky consistency.
