Enoki Mushroom Pork Stir-fry (Jeyuk Bokkeum)
Spicy and Sweet Pork Stir-fry Loaded with Enoki Mushrooms!
I saw enoki mushrooms on sale at the grocery store, so I bought a lot and decided to make this delicious Jeyuk Bokkeum! The chewy texture of the enoki mushrooms adds a wonderful dimension to this classic Korean dish. Let me show you how to make it!
Main Ingredients- Pork Neck or Pork Shoulder 600g (approx. 1.3 lbs)
- 1/2 medium Onion
- 1 stalk Green Onion
- 1 Korean Green Chili (optional, for extra heat)
- 2 packs Enoki Mushrooms
Sauce Ingredients- 2 Tbsp Gochujang (Korean chili paste)
- 3 Tbsp Gochugaru (Korean chili flakes)
- 2 Tbsp Soy Sauce
- 2 Tbsp Fish Sauce (or Anchovy Sauce)
- 4 Tbsp Corn Syrup (or Rice Syrup, Oligodang)
- 1 Tbsp Perilla Oil
- 1 Tbsp Minced Garlic
- 1 tsp Salt (adjust to taste)
- 1 tsp Dasida (or Chicken Stock Powder)
- Pinch of Black Pepper
- 1 Tbsp Sesame Oil (for finishing)
- 1 tsp Toasted Sesame Seeds (for finishing)
- 2 Tbsp Gochujang (Korean chili paste)
- 3 Tbsp Gochugaru (Korean chili flakes)
- 2 Tbsp Soy Sauce
- 2 Tbsp Fish Sauce (or Anchovy Sauce)
- 4 Tbsp Corn Syrup (or Rice Syrup, Oligodang)

- 1 Tbsp Minced Garlic
- 1 tsp Salt (adjust to taste)
- 1 tsp Dasida (or Chicken Stock Powder)
- Pinch of Black Pepper
- 1 Tbsp Sesame Oil (for finishing)
- 1 tsp Toasted Sesame Seeds (for finishing)
Cooking Instructions
Step 1
First, prepare the pork, the star of Jeyuk Bokkeum. Gently pat the pork dry with paper towels to remove excess blood. If you have large chunks, slice them into bite-sized pieces.
Step 2
In a large bowl, place the prepared pork. Add all the sauce ingredients: gochujang, gochugaru, soy sauce, fish sauce, corn syrup, perilla oil, minced garlic, salt, Dasida, and black pepper.
Step 3
Using your hands, thoroughly mix the sauce with the pork, ensuring every piece is well-coated. This “massaging” step helps the flavors penetrate deeply. Let it marinate for about 15 minutes for best results.
Step 4
While the pork is marinating, prepare the vegetables. Slice the onion thinly. Cut the green onion into diagonal pieces. Finely chop the Korean green chili for a spicy kick. For the enoki mushrooms, trim off the base, separate the strands, rinse them lightly under cold water, and gently squeeze out any excess moisture.
Step 5
Heat a wok or large pan over medium-high heat. Add the marinated pork and stir-fry. Cook until the pork is about 80% done. Keep stirring to prevent sticking. Taste the mixture and add a little more salt if needed to adjust the seasoning.
Step 6
Once the pork is almost cooked through, add the sliced onions and green onions. Continue to stir-fry until the onions become translucent and slightly softened. This will bring out their natural sweetness.
Step 7
Finally, add the prepared enoki mushrooms. Gently toss everything together to combine. Enoki mushrooms cook very quickly; overcooking can make them mushy. It’s best to just mix them in and turn off the heat – the residual heat will finish cooking them perfectly.
Step 8
To finish, drizzle in 1 tablespoon of sesame oil and sprinkle with 1 teaspoon of toasted sesame seeds. Your delicious Enoki Mushroom Pork Stir-fry is ready! Serve it hot with steamed rice for a complete and satisfying meal.
