Eomuk (Fish Cake) and Bean Sprout Stew (Baek Jong-won Style)
Baek Jong-won Recipe: Delicious Eomuk and Bean Sprout Stew (Perfect Side Dish!!)
This is the Eomuk and Bean Sprout Stew from the TV show ‘Home Cook Baekseonsaeng’. It’s simple, uses easily accessible ingredients, and makes a fantastic side dish for rice. I’ve been making it often since I first saw it. It’s great as a side dish, or you can top it with a fried egg and mix it with rice for a hearty one-bowl meal. ^^
Ingredients- 4 sheets of fish cake (eomuk)
- 1 large handful of bean sprouts (about 150-200g)
- 1/2 stalk of green onion
- 1/2 onion
- 2 Tbsp gochujang (Korean chili paste)
- 1 Tbsp gochugaru (Korean chili powder)
- 1 Tbsp sugar
- 2 Tbsp soy sauce
- 1/2 Tbsp minced garlic
- 150ml water
- 1 Tbsp sesame oil

Let’s start by preparing the ingredients for this delicious Eomuk and Bean Sprout Stew!

First, briefly rinse the fish cakes under cold water to remove any impurities. Then, cut them into bite-sized rectangular pieces. Slice the onion into uniform strips about 0.5cm thick. Cut the green onion diagonally into large pieces. Having your ingredients prepped like this will make the cooking process much smoother.
Step 3
Pour 150ml of water into a pot and add the cut fish cakes. Now, bring it to a boil and let it simmer until the fish cakes become soft.

Tip: Simmering the fish cakes first allows their delicious flavor to infuse into the water, resulting in a richer taste. Be patient and let them simmer well.

Once the fish cakes have softened, add the washed bean sprouts generously into the pot. Next, add the sliced onion and diagonally cut green onion. Don’t be shy with the bean sprouts; they will cook down significantly.

Now it’s time to add all the seasoning ingredients. Add 2 Tbsp gochujang, 1 Tbsp gochugaru, 1 Tbsp sugar, 2 Tbsp soy sauce, and 1/2 Tbsp minced garlic. Stir well to combine all the ingredients. Once the seasoning is evenly distributed and the bean sprouts are tender yet still slightly crisp, drizzle in 1 Tbsp of sesame oil for extra flavor, then turn off the heat.
