  • Pork shoulder (for boiling) 600g
  • Scallions 2 stalks

  • Zucchini 1/2
  • Radish 1/2
  • Firm Tofu 1 block

Cooking Instructions

Step 1

First, let’s prepare the vegetables. Slice the onion and zucchini into 0.5cm thick half-moons or bite-sized pieces. Cut the radish into 1cm thick slices, and the firm tofu into generous 1.5-2cm cubes.

Thinly slice the scallions diagonally, about 1cm thick. Cut the pork shoulder into large pieces. Cutting them too small might cause them to break apart during cooking.

Heat a little cooking oil in a deep stainless steel pot. Add the sliced pork and sprinkle with salt (about 3 pinches). Sear the outer surfaces of the pork over medium-low heat until it starts to release its fat.

Once the pork is seared, add the minced garlic and sliced scallions. Stir-fry them together. Next, add the doenjang (3 Tbsp), sugar (1 Tbsp), soy sauce (2 Tbsp), and fish sauce (2 Tbsp). Stir-fry to combine the ingredients well with the pork. Be careful not to burn the doenjang while stir-frying.

When the seasonings are well mixed with the pork, pour in 4-5 cups of water, enough to cover the ingredients. Cover the pot with a lid and bring to a boil over medium heat. Let it simmer for 15 to 20 minutes until the pork and radish become tender.

Once the pork and radish are somewhat cooked, add the large pieces of radish and red pepper flakes (2 Tbsp). Cover the pot again and continue to simmer over medium heat for another 15 to 20 minutes. This allows the radish to absorb the flavors and the broth to reduce slightly.

Check if the radish is transparent and tender. If so, add the sliced zucchini and onion. Cook for just 3 more minutes to retain a slight crispness in the vegetables.
