  • 2 medium eggplants
  • 100g pork neck (moksal)
  • 1/2 stalk of green onion (white part mostly)
  • 1/2 onion
  • 2 servings of cooked rice

Cooking Instructions

Step 1

Let’s start making the delicious eggplant rice bowl that the whole family will love!

Step 2

Wash the 2 eggplants thoroughly, remove the stems, and cut them into bite-sized pieces, about 1.5-2 cm thick. Sprinkle a pinch of salt on the cut eggplant and let it sit for about 5 minutes to draw out moisture. This helps the eggplant absorb less oil during cooking and makes it much softer. (This step is optional but recommended!)

Step 3

Cut the 100g of pork neck into bite-sized pieces. Place the pork in a bowl, add a pinch of salt and black pepper, and mix well to marinate. Let it sit for at least 10 minutes for the flavors to penetrate.

Step 4

Slice the green onion into large pieces, focusing on the white parts. Heat a generous amount of cooking oil in a pan over medium-low heat. Add the sliced green onion and gently sauté until fragrant, infusing the oil with its aroma. Once the green onion has released its flavor, add the marinated pork neck and stir-fry together. Cook until the pork is lightly browned.

Step 5

When the pork is somewhat cooked, add the salted eggplant to the pan and stir-fry together for another 2-3 minutes, until the eggplant starts to soften. Be careful not to overcook, as the eggplant can become mushy.

Step 6

Now it’s time for the seasoning! Add 1 Tbsp oyster sauce, 1 Tbsp soy sauce, 1/2 Tbsp plum syrup, and 1/3 Tbsp sugar. Stir well to ensure the sauce coats all the ingredients evenly. Adjust the amount of sugar to your preference.

Step 7

Reduce the heat to low and continue to stir-fry for 1-2 minutes, ensuring nothing sticks to the bottom. The mixture will become glossy as the liquid reduces. This allows the flavors to meld beautifully.

Step 8

Finally, add the chopped scallions and 1 Tbsp toasted sesame seeds. Give it a quick toss to enhance the aroma and flavor of the eggplant rice bowl. The freshness of the scallions and the nuttiness of the sesame seeds make it even more appealing.

Step 9
