- Scallions or Chives, a handful (or zucchini, a small amount)
- Carrots, 2 (small size)
- Bell Pepper, a small amount (use up leftover pieces)
- Egg, 1
- Salt, a pinch
- Seaweed Flakes, a pinch (from 1 sheet of roasted seaweed)
Rich Broth Ingredients- Dried Anchovies for Broth, 1 handful
- Dried Kelp, a suitable amount
- Green Onion Roots, 2 (optional, can use leek roots)
- Onion, 1
- Dried Pollack Heads, 2-3 (if saved)
- Soy Sauce for Soup, 1 tablespoon
- Soy Sauce (regular), 1 tablespoon
- Radish, a small piece (optional)

- Gochugaru (Korean Red Pepper Flakes), 2 tablespoons

- Plum Extract (Maesil Cheong), 1/2 tablespoon
- Sesame Oil, 1 tablespoon
- Sesame Seeds, a sprinkle

Cooking Instructions
Step 1
First, let’s make a deep and refreshing broth. It’s helpful to have broth ingredients like dried pollack heads or green onion roots ready beforehand. (You can also use leftover pollack heads from making dried pollack dishes or roots from making scallion kimchi.)
Step 2
Place all the broth ingredients in a pot and bring to a boil over medium-high heat. Once boiling, reduce the heat to medium-low and simmer for at least 30 minutes to allow the flavors to fully infuse. Finally, add 1 tablespoon of soy sauce for soup and 1 tablespoon of regular soy sauce to season.

While the broth is simmering, you can prepare the colorful vegetable toppings for your noodles. This will save you time.

Whisk the egg and thinly pan-fry it to make an omelet. Let it cool slightly, then thinly slice it into strips. (Slice the other vegetables similarly.) For the carrots, lightly oil a pan, add a pinch of salt, and stir-fry until tender and slightly sweet.

Once the broth and vegetable toppings are ready, it’s time to cook the noodles. Fill a large pot with plenty of water and bring it to a rolling boil. When the water boils, add about one cup of cold water; this helps the noodles become chewier. Make sure to stir the noodles occasionally while they cook to prevent them from sticking together.

Drain the cooked noodles, rinse them under cold water, and remove excess water. Place a serving of noodles in a bowl, arrange the prepared vegetable toppings attractively, and ladle in the warm broth. For an extra burst of flavor, generously add the wild garlic sauce.

Finally, sprinkle some roasted seaweed flakes over the top for an added layer of flavor and aroma.

I used leftover bell pepper from the fridge as a topping. While it wasn’t as crisp as I might have liked, the sweet flavor of the bell pepper complemented the noodles nicely. Feel free to experiment with various vegetables!
